Today we will cook champignon heh in Korean style. For this dish, it is advisable to take small champignons; such mushrooms look more beautiful in the dish. There are several options for preparing heh from champignons. I have another version published soon.

Ingredients:
● Fresh champignons – 400 gr
● Carrots -1 pcs.
● Onion -1 pc.
● Ground coriander - 2 tsp.
● Garlic -5 cloves
● Rice or apple cider vinegar -2 tbsp.
● Soy sauce, mirin, hot pepper, bay leaf, paprika flakes, salt, sugar, vegetable oil, green onions - to taste

1.Lightly grind the coriander seeds in a mortar. Without fanaticism, just chop it slightly.

2.There are several options for handling carrots. In any case, peel the carrots and grate them into long, narrow strips on a Korean carrot grater. In this recipe, I poured a pinch of salt and a pinch of sugar, squeezed the carrots with my hands and placed them in a colander to allow the juices to drain. And then I squeezed it out a little more with my hands. But you can simply add rice vinegar and sugar to the carrots, and then squeeze them without draining the juice.

3.Place the bay leaf and washed champignons in boiling water. Cook the champignons for 7 minutes, drain the water, add a spoonful of soy sauce and a spoonful of fish sauce to the champignons. There were such big beautiful champignons, but during cooking they noticeably shrank, sadness! Mix the mushrooms with the sauce.

4.Peel the onions and cut them into half rings. Fry the onion in vegetable oil until translucent. Turn off the heat and add crushed coriander, a pinch of paprika flakes and hot pepper. Sometimes I also add a little sriracha.

5.Mix champignons, carrots and onions with spices in a saucepan. Mix thoroughly but gently. Add rice vinegar, a couple of spoons of mirin, green onions, cut into large pieces about the size of your finger. Finely chop the garlic and put it in a spoon, and place the spoon in the pan. Heat 5 tbsp in a frying pan. vegetable oil, and then pour the sizzling oil directly onto the garlic in a spoon. Stir and taste, add fish sauce, pepper and sugar if necessary.

6.Let the heh champignons cool and put the saucepan with them in the refrigerator. It’s best for a few hours, but I like the taste of these champignons better the next day, it tastes better to me! Serve Korean-style champignons with sesame seeds and herbs\green onions. Great snack! Need to try!

Heute bereiten wir Champignon-Heh nach koreanischer Art zu. Für dieses Gericht empfiehlt es sich, kleine Champignons zu nehmen; solche Pilze sehen im Gericht schöner aus. Es gibt mehrere Möglichkeiten, Heh aus Champignons zuzubereiten. Ich habe bald eine weitere Version veröffentlicht.
Auf geht's, es wird einfach magisch!

Zutaten:
● Frische Champignons – 400 gr
● Karotten -1 Stk.
● Zwiebel -1 Stck.
● Gemahlener Koriander – 2 TL.
● Knoblauch – 5 Zehen
● Reis- oder Apfelessig – 2 EL.
● Sojasauce, Mirin, scharfer Pfeffer, Lorbeerblatt, Paprikaflocken, Salz, Zucker, Pflanzenöl, Frühlingszwiebeln – nach Geschmack

1.Die Koriandersamen in einem Mörser leicht zermahlen. Ohne Fanatismus einfach leicht hacken.
2.Für den Umgang mit Karotten gibt es mehrere Möglichkeiten. Auf jeden Fall die Karotten schälen und auf einer koreanischen Karottenreibe in lange, schmale Streifen reiben. In diesem Rezept habe ich eine Prise Salz und eine Prise Zucker hineingegeben, die Karotten mit meinen Händen ausgedrückt und sie in ein Sieb gegeben, damit der Saft abtropfen kann. Und dann habe ich es mit meinen Händen noch etwas mehr herausgedrückt. Sie können den Karotten aber auch einfach Reisessig und Zucker hinzufügen und diese dann auspressen, ohne den Saft abzulassen.
3.Lorbeerblatt und gewaschene Champignons in kochendes Wasser legen. Die Champignons 7 Minuten kochen, das Wasser abgießen, einen Löffel Sojasauce und einen Löffel Fischsauce zu den Champignons geben. Es gab so große, schöne Champignons, aber beim Kochen sind sie merklich geschrumpft, schade! Die Pilze mit der Soße vermischen.
4.Zwiebeln schälen und in halbe Ringe schneiden. Die Zwiebel in Pflanzenöl glasig braten. Schalten Sie den Herd aus und fügen Sie zerstoßenen Koriander, eine Prise Paprikaflocken und Peperoni hinzu. Manchmal füge ich auch etwas Sriracha hinzu.
5.Champignons, Karotten und Zwiebeln mit Gewürzen in einem Topf vermischen. Gründlich, aber vorsichtig mischen. Fügen Sie Reisessig, ein paar Löffel Mirin und Frühlingszwiebeln hinzu und schneiden Sie sie in große, etwa fingergroße Stücke. Den Knoblauch fein hacken, in einen Löffel geben und den Löffel in die Pfanne geben. 5 EL in einer Bratpfanne erhitzen. Pflanzenöl und gießen Sie das heiße Öl dann mit einem Löffel direkt auf den Knoblauch. Umrühren und abschmecken, bei Bedarf Fischsauce, Pfeffer und Zucker hinzufügen.
6.Lassen Sie die Heh-Champignons abkühlen und stellen Sie den Topf damit in den Kühlschrank. Am besten für ein paar Stunden, aber am nächsten Tag schmecken mir diese Champignons besser, sie schmecken mir besser! Servieren Sie Champignons nach koreanischer Art mit Sesamkörnern und Kräutern/Frühlingszwiebeln. Toller Snack! Muss es versuchen!
