Ingredients

  • 1 pound flank steak, thinly sliced against the grain
  • 1/3 cup cornstarch
  • Vegetable oil, for frying
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • Green onions, chopped
  • Steamed rice, for serving

Method

  1. Slice the flank steak thinly against the grain.
  2. Toss the slices in cornstarch until coated.
  3. Heat oil in a wok and fry the beef until browned and crisp at the edges. Lift out.
  4. In the wok, saute garlic and ginger in a little oil.
  5. Add soy sauce and brown sugar. Cook until the sauce reduces to a dark, glossy syrup.
  6. Return the beef and toss until every piece is coated and sticky.
  7. Finish with chopped green onions. Serve over rice.
