After that, if your taste is multiple, if you are curious, a bit adventurous and an alchemist on the edges, this recipe is made for you. ###### Hi dear Hivers ! I hope you are having a good weekend. Today I wanted to introduce you to an authentic discovery I made a little over a year ago. This wonderful condiment, one of those perfect foods, recommended for the cold seasons as well as to increase the power of your immune system - *Fear not, I have nothing to sell that can't be injected with a syringe...* I only want to talk about simple foods, products of Nature with tonic, stimulating and for some, anti-carcinogenic properties. I will leave you to research the ingredients one by one later. This discovery began with the discovery of a preservation technique that I personally find simply miraculous: [lacto-fermentation](https://en.wikipedia.org/wiki/Lactic_acid_fermentation). In a nutshell, it is a type of preservation based on brine that allows a large number of foods to be preserved for a long time, without the addition of external energy or sterilization and with only salt and water. It is the same principle as with sauerkraut or kimchi. Since I started, I have not stopped and we eat food preserved in this way at almost every meal. Oh yes, I forgot to tell you that these foods were loaded with probiotics, free of charge, and were much more digestible. So it's a perfect technique to make preserved food without energy in these times of food crises... and loss of confidence in the word of politicians. But that's another story, and remember that unfortunately, a promise is only binding on those who believe it ! After this introduction, let's move on to the recipe itself...

It is a lacto-fermentation so three ingredients all in equal parts, not too complicated so for the proportions... So we have : - 1/3 fresh ginger - 1/3 fresh turmeric - 1/3 raw garlic For me, I had about 80 grams of each for my little jar. This time I added a little chili pepper from the garden, but this is optional... I didn't put it in the original recipe. You will also need : - A glass jar with a lever and rubber seal, type [Le Parfait](https://www.leparfait.fr/) - An herb blender (or a knife and board) - Chlorine-free water (to do this, let it vent for a few hours) - Pure sea salt, without additives - Black pepper

I'm putting a little excerpt from my peeling session here, along with a recommendation if you haven't experienced it yourself: turmeric stains a lot! So forget your white apron or your favorite shirt! Secondly, don't throw away all your peelings - *which will go into the compost anyway* ;-) - make a tea with ginger and turmeric. But don't forget to add pepper, that's what activates the anti-carcinogenic properties of the curcumin !

After peeling everything, we go on to the mixing. As mine is quite small, I have to make many passes, but when you believe in it, nothing stops you ! But the fact that this one has a saffron orange tint, which is almost impossible to clean... Don't worry, mine was already in the same state, but you can also use a knife or a chopper.

Let's now calculate the amount of salt for your brine. Traditionally, there should be 3 to 4%. This gives us 30 to 40 grams per litre of water. Generally, I start with 4%, because it increases the acidity a bit, but also the conservation. Here I started with 300 grams of water and therefore 12 grams of salt. I added pepper, about a teaspoon, and dissolved it in the water.

After filling my jar, and mixing well so that everything is homogeneous, all that remains is to pour the brine so that it covers the entire preparation.

The principle of this preservation technique is that the food is totally under water, without oxygen, so when using other containers, it is recommended to put weights to keep the food under water. But that's why this type of jar is called "The Perfect", thanks to the seal, the fermentation gases will expel the oxygen, but thanks to the pressure of the rubber seal, it won't be able to get in and the inside will be naturally vacuumed. Ingenious, isn't it ?

Another tip : don't fill your jar to the brim! During the fermentation process, the mixture can swell and overflow. Always leave a few centimeters at the top... Here, about one or two.

Now you know everything! One last recommendation, don't forget to date your jar, it avoids confusion **and above all, if it smells rotten when you open it** - *not just strange* - **don't take any risks and throw it in the compost** (or in the toilet if there is no compost :) As for the taste, I've saved this part for the brave ones who will read to the end, it's quite indescribable but strangely, it doesn't really have the flavor of each ingredient taken separately. It's really the result of a complex alchemy, it smells smoky, the light smell of earth and the taste is deep and invigorating. This will be a first with chili, and I will tell you that in a few weeks. Last information, the fermentation should be ready in one or two weeks, personally, I had left my first jar for several months and I finished it more than a year later, kept in the fridge of course ;-)

Après, si votre goût est multiple, que vous êtes curieux, un peu aventureux et alchimiste sur les bords, cette recette est faite pour vous. ###### Salut chers Hivers ! J'espère que vous passez un bon weekend. Aujourd'hui je voulais vous présenter une authentique découverte que j'ai fait il y un peu plus d'un an. Celle de ce condiment merveilleux, un de ces aliments parfait, recommandé pour les saisons froides ainsi que pour décupler la puissance de votre système immunitaire - *N'ayez crainte, je n'ai rien à vendre qui ne s'injecte avec une seringue..!* Je ne veux seulement parler là de simples aliments, produits de la Nature aux propriétés toniques, stimulantes et pour certains, anti-cancérigènes. Je vous laisse faire des recherches un peu plus tard sur les ingrédients pris un par un. Cette découverte a débuté par celle d'une technique de conservation que je trouve pour ma part, tout simplement miraculeuse : [la lactofermentation](https://en.wikipedia.org/wiki/Lactic_acid_fermentation). Pour la faire courte, c'est un type de conservation à base de saumure qui permet de conserver un grand nombre d'aliments, pendant longtemps, sans ajout d'énergie extérieure ni stérilisation et avec seulement du sel et de l'eau. C'est le même principe qu'avec la choucroute ou le kimchi. Depuis mes débuts, je ne me suis plus arrêté et nous mangeons des aliments conservés ainsi à presque tous les repas. Ah oui, j'ai oublié de vous dire que ceux-ci se chargeaient de probiotiques, gratuites donc, et étaient bien plus digestes. C'est donc une technique parfaite pour faire des conserves sans énergie dans ces temps de crises alimentaires... et de pertes de confiance dans la parole des politiques. Mais cela c'est une autre histoire et retenez toujours qu'une promesse n'engage malheureusement bien souvent que ceux qui y croient ! Après cette introduction, passons à la recette à proprement parler...

Il s'agit d'une lactofermentation donc de trois ingrédients tous à parts égales, pas trop compliqué donc pour les proportions... Nous avons donc : - 1/3 de gingembre frais - 1/3 de curcuma frais - 1/3 d'ail cru Pour moi, j'avais environ 80 grammes de chaque pour mon petit bocal. Cette fois-ci, j'ai ajouté un peu de piment récolté au jardin, mais celui-ci est facultatif... Je n'en avais pas mis dans la recette originale. Vous aurez aussi besoin : - D'un bocal en verre à levier et joint en caoutchouc, type [Le Parfait](https://www.leparfait.fr/) - D'un mixeur à herbes (ou un couteau et une planche) - D'eau sans chlore (pour cela, laissez là s'éventer quelques heures) - De sel marin pur, sans additif - De poivre noir

Je vous mets un petit extrait de ma session d'épluchage, ainsi qu'une recommandation si vous ne l'aviez pas expérimenté vous-même : le curcuma tâche énormément ! Alors oubliez votre tablier blanc ou votre chemise favorite ! Secondo, ne jetez pas toutes vos épluchures - *qui de toute façon iront au compost* ;-) - faites-vous une tisane avec celle du gingembre et du curcuma. Mais n'oubliez pas d'ajouter du poivre, c'est ce qui active les propriétés anti-cancérigènes de la curcumine !

Après avoir tout pelé, on passe au mixage. Comme le mien est assez petit, je dois faire de nombreux passages, mais quand on y croit, rien ne nous arrête ! Mais le fait de teinter celui-ci d'une coloration orange safran, impossible ou presque à nettoyer... Rassurez-vous, le mien était déjà dans le même état, mais vous pouvez aussi vous servir d'un couteau ou d'un hachoir.

Passons dès lors au calcul du de la quantité de sel pour votre saumure. Traditionnellement, il faut qu'il y en ai 3 à 4%. Ce qui nous donne, 30 à 40 grammes par litre d'eau. Généralement, je pars sur 4, car cela augmente un peu l'acidité, mais aussi la conservation. Ici je suis parti avec 300 grammes d'eau et donc 12 grammes de sel. J'ai ajouté du poivre, environ une cuillère à café et j'ai dissous le tout dans l'eau.

Après avoir rempli mon bocal, et bien mélangé pour que le tout soit homogène, il ne reste plus qu'à verser la saumure afin que celle-ci recouvre toute la préparation.

Le principe de cette technique de conservation, c'est que les aliments soient totalement sous l'eau, sans oxygène, aussi lorsqu'on utilise d'autres contenants, il est recommandé de mettre des poids pour garder les aliments sous l'eau. Mais c'est pour cela que ce type de bocaux est appelé "Le Parfait", grâce au joint, les gaz de fermentation vont expulser l'oxygène, mais grâce à la pression du joint en caoutchouc, celui-ci ne pourra pas rentrer et l'intérieur sera naturellement mis sous vide. Ingénieux, n'est-ce pas ?

Un autre dernier conseil, ne remplissez pas votre bocal à ras bord ! En effet, lors du processus de fermentation, le mélange peut gonfler et donc déborder. Il faut toujours garder une marge de quelques centimètres en haut... Ici, un ou deux environ.

Voilà, vous savez tout ! Une dernière recommandation, n'oubliez pas de dater votre bocal, ça évite les confusions **et surtout, si à l'ouverture cela sent le pourri** - *pas juste étrange* - **ne prenez pas de risque et jetez le tout au compost** (ou aux toilettes si pas de compost :) Concernant le goût, j'ai gardé cette partie pour les courageux qui lirons jusqu'au bout, c'est assez indescriptible mais étrangement, cela n'a plus vraiment la saveur de chacun des ingrédients pris distinctement. C'est vraiment le résultat d'une alchimie complexe, cela sent le fumé, l'odeur légère de la terre et le goût est profond et vivifiant. Là, ce sera une première avec du piment, et je vous dirais cela dans quelques semaines. Dernière information, la fermentation devrait être prête en une ou deux semaines, personnellement, j'avais laissé mon premier bocal pendant plusieurs mois et je l'ai terminé plus d'un an après, conservé au frigidaire bien entendu ;-)
