The freshness of processed vegetables is not only obtained from clear soup. But look how I can find freshness from simple vegetable preparations into a comforting bowl.
Hi vegan lovers, look today the sky in my area is very bright, and it's enough to make the body feel bad. I want to prepare one of the special recipes using a combination of vegetables that can create a bowl of freshness at home.
Vegan Sayur Asem
Sayur Asem is one of the most popular vegetable preparations in Indonesia. This vegetable is usually prepared from non-vegan ingredients such as adding shrimp paste as a seasoning to taste. However, as we know, shrimp paste is a non-vegan ingredient and is prohibited in the community. Therefore, so that vegan lovers can enjoy the vegan version of tamarind vegetables, I thought of the idea of making this tamarind sauce. Like soup like tamarind vegetable soup, it also has quite extraordinary taste and characteristics.
Materials Used
10 melinjo leaves
A handful of young melinjo fruit
3 green eggplants
½ sweet corn
4 long beans
20 grams of peanuts
1 stalk lemongrass (optional)
Ground Spices
7 red onions
2 cloves of garlic
2 cm turmeric
2 red chilies
1 candlenut
3 pieces of sunti acid
Making vegan tamarind bowls is the first thing I have done in my life. How I prepare some vegetables that I cook with different spices from the original recipe. Don't hesitate at all to make it, because I believe the result will not be much different from the original recipe which uses shrimp paste. Again, shrimp paste is an ingredient that is always present in Indonesian cooking. Vegans definitely won't be able to enjoy it, but believe me, without shrimp paste, this recipe is no less delicious than the original recipe.
Cooking Procedure
Preparation of vegetable
Step 1
Prepare all the vegetables, then first I cut the half of the corn into pieces.
Step 2
Next, I cut the eggplant into small rounds or according to your taste.
Step 3
Clean and discard the hard stalks of the melinjo seeds, now use young melinjos.
Step 4
Also cut the melinjo leaves into small pieces or cut them according to your taste.
Step 5
Next, prepare the long bean vegetables, cut them lengthwise until they are finished.
Step 6
Do all the ingredients until finished, then continue with the preparation of the ground spices.
Step 7
Blend all the ground spices until they are really smooth, so make sure the chilies are perfectly smooth.
Time to Cook!
Step 1
Add the ground spices, then add the lemongrass and bay leaves.
Step 2
Cook and add a little water, after boiling add the corn.
Step 3
Then add the melinjo fruit and cook until the vegetables are soft.
Step 4
Add peanuts, stir evenly, here I use roasted peanuts, well you can use raw peanuts.
Step 5
Add the long beans and eggplant and cook until all the vegetables are cooked.
Step 6
Then finally add the melinjo leaves when the other vegetables are almost cooked so that the melinjo leaves don't get soft.
