Today, we’re tackling fava beans again. These greenish-brown beans are delicious, with a subtle, cheese-like flavor. But they are such a hassle to prepare! The problem is that the skin on dried fava beans is very tough; it’s considered indigestible and shouldn't be eaten, so it has to be removed. That’s the tricky part. This time, I took a different approach. First, the fava beans soak in water with a pinch of baking soda for 12 hours; then, the skin is peeled off each raw bean by hand. The skin comes off easily, but there are a lot of beans, and they vary in size. It’s going to take some effort! Let’s go—it’s going to be a real workout!
Ingredients:
● Dried fava beans – 250 g
● Pork leg fillet – 350 g
● Onion – 1 pc.
● Carrot – 1 pc.
● Soy sauce – 4 tbsp
● Bay leaves – 2 pcs.
● Sugar – 2 tbsp
● Mustard – 1 tsp
● Apple cider vinegar (6%) – 2 tbsp
● Vegetable oil (for frying), cumin, salt, hot pepper, baking soda, green onions, fresh herbs – to taste
1.It was hard work, but all the fava beans are finally peeled and ready to cook! Hooray! Drop the beans into boiling water; the water level should be about a finger's width above the beans. Add the bay leaves. Peeled fava beans cook quickly, but since the final dish will have a thick, porridge-like consistency, there’s no need to worry about overcooking them. After 10 minutes of boiling, we’ll start preparing the meat and vegetables.
2.Peel the carrot and cut it into wedges. Cut the onion into pieces roughly the same size as the carrot. Sauté the onion and carrot until golden, then push them to the side and add the meat pieces to the pan. I used pieces of leg fillet with some fat attached. Brown the meat on all sides, then add a generous pinch of cumin, along with a pinch of salt and pepper. Stir the meat and vegetables together.
3.Transfer the contents of the pan to the pot with the fava beans. The result is something between a thick soup and a stew. Stir well. Add the sugar, apple cider vinegar, and mustard. If there is too much liquid, you can drain off a cup or two. That’s what I did; it makes a nice, thick broth that is well worth drinking. Cover the pot and cook the dish over low heat for about 20 minutes. Taste and adjust the salt and pepper as needed.
4.Serve the fava beans and meat in bowls and garnish with sesame seeds and green onions. It turned out quite well—tasty—but next time I’m going to make someone else peel the fava beans; it’s such a tedious chore.

Heute haben wir wieder mit Saubohnen zu kämpfen. Diese grünlich-braunen Bohnen sind eine köstliche Leckerei mit einem leichten Käsegeschmack. Aber sie sind ganz schön viel Arbeit! Das Problem ist, dass die Schalen getrockneter Saubohnen sehr zäh und als unverdaulich gelten, also müssen sie entfernt werden. Das ist die Knackigkeit. Diesmal habe ich es anders gemacht. Die Saubohnen werden zuerst 12 Stunden lang in Wasser mit einer Prise Natron eingeweicht, und dann werden die Schalen von jeder einzelnen Bohne von Hand abgezogen. Die Schalen lassen sich leicht entfernen, aber es sind viele Bohnen, und sie sind alle unterschiedlich groß. Das wird eine Menge Arbeit! Na dann los, das wird richtige Entspannung!
Zutaten:
● Getrocknete Saubohnen – 250 g
● Schinkenfilet – 350 g
● Zwiebel – 1 Stück
● Karotte – 1 Stück
● Sojasauce – 4 EL
● Lorbeerblätter – 2 Stück
● Zucker – 2 EL
● Senf – 1 TL
● Apfelessig (6 %) – 2 EL
● Pflanzenöl zum Braten, Kreuzkümmel, Salz, Chilipulver, Natron, Frühlingszwiebeln, Kräuter – nach Geschmack
1.Es war etwas Arbeit, aber endlich sind alle Saubohnen geschält und bereit zum Kochen! Hurra! Die Bohnen in kochendes Wasser geben, sodass das Wasser etwa 2,5 cm über den Bohnen steht. Das Lorbeerblatt hinzufügen. Saubohnen ohne Schale garen schnell, aber da wir ohnehin einen dicken Brei zubereiten, müssen Sie sich keine Sorgen machen, dass sie zu weich werden. Nach 10 Minuten Garzeit mit der Zubereitung von Fleisch und Gemüse beginnen.
2.Die Karotten schälen und in Spalten schneiden. Die Zwiebel in etwa gleich große Stücke wie die Karotten schneiden. Zwiebel und Karotten goldbraun anbraten, dann beiseite stellen und die Fleischstücke in die Pfanne geben. Ich habe Schinkenfilets mit etwas Fett verwendet. Das Fleisch von allen Seiten anbraten, bis es braun ist, dann eine großzügige Prise Kreuzkümmel, Salz und Pfeffer hinzufügen. Fleisch und Gemüse umrühren.
3.Den Pfanneninhalt zu den Saubohnen geben. Es entsteht eine Art dicke Suppe oder Brei. Umrühren. Zucker, Apfelessig und Senf hinzufügen. Falls zu viel Flüssigkeit vorhanden ist, kann man ein bis zwei Tassen abgießen. Ich habe das getan; es ist eine schöne, dicke Brühe, die man trinken kann und sollte. Den Topf abdecken und bei schwacher Hitze etwa 20 Minuten köcheln lassen. Abschmecken und gegebenenfalls mit Salz und Pfeffer würzen.
4.Die Saubohnen und das Fleisch auf Tellern anrichten und mit Sesamkörnern und Frühlingszwiebeln garnieren. Es war wirklich lecker, aber nächstes Mal lasse ich die Saubohnen schälen; das ist einfach zu mühsam.
