[Recipe] Keto Green Chicken Chili

I just made the best chili. Usually on keto, I kinda fake a chili but it's not nearly as good as chili that'd padded out with beans. This one uses ground chicken, tofu, and mushrooms for the filler, but tomatillo really transforms the broth to some next level magic. It's not photogenic (sorry) but its super fucking tasty. Writing this down so I can make it again :D

1/2 onion
3 garlic cloves
1lb ground chicken
1/2 box of tofu
1 tsp oregeno
1 tsp cumin
1 tsp kosher salt
1 bullion cube
1/2 cup mushrooms (dried ok)
1/2 cup frozen spinach
2 cups chopped cabbage
1 can green chilis
3 tomatillos

First pour a bit of cooking oil on the bottom of your pot. Chop your onions and garlic, and drop that in. Cook on med-low til the onions are translucent.

Turn your heat up to med. Add your chicken, and cook til its not raw. Add the tofu (drained), and crumble it in. Add your oregeno, salt, and cumin. Mix the bullion cube up with a little hot water in another bowl to break it up, and add it in (I used chicken). Add the mushrooms, cabbage, and spinach. In another pot, cook your tomatillos in some water. When they're soft, add 1 cup of tomatillo water to your chili, and carefully scoop the tomatillos out of their wrappers. Add those in. Mix in a small can of green chilis, and cook until a lot of the water boils off.

I don't know the carb count in this, but I know it's super low and incredibly yummy. It's way budget friendly - great for freelance life. It's not very spicy, so feel free to add some jalapenos or serrano or some other pepper. Garnish with cheese and cilantro. Unless you're one of those people who biologically hate cilantro.
