A rice bowl dish is not complete if it is not combined with tempting side dishes. One of them is the following eggplant preparation, first try and impressive.
Eggplant is a type of vegetable that is very famous in my country, there are many types of eggplant, but the one that is often found in the market is purple eggplant. So yesterday when I opened social media someone passed by on my homepage about a tempting eggplant dish. One of them is purple eggplant which is processed into unagi.
As you know, unagi is a typical Japanese dish made from processed eel. Apart from not liking eel, even animal foods are strictly prohibited in this community, therefore for those of you who are vegan, you can also enjoy the vegan version of unagi which is rich in vitamins and is even no less delicious than the original recipe which uses animal products.
This recipe was originally made non-vegan, they still make it with a mixture of animal-based ingredients. However, to make it more special to this community, I modified this recipe a little. Here are the materials you need to prepare!
1 purple eggplant
1 spoon sweet soy sauce
1 spring onion
1 clove of garlic
1 teaspoon vinegar
1 teaspoon garlic powder
½ teaspoon powdered stock
1 teaspoon vinegar

Step 1
The first time, I prepared the sauce. Finely chop the garlic, mix with sweet soy sauce.
Step 2
Add sesame oil and granulated sugar.
Step 3
Also add vinegar, you can skip vinegar if you don't have it. Then I added garlic powder.

Next add ¼ teaspoon of mushroom stock, stir everything well.
Step 5
Finally season with salt. Then stir again until evenly mixed and the sauce is ready to be applied.

Cut the eggplant into two parts, then peel the eggplant skin until clean.
Step 2
Steam the eggplant for approximately 5 minutes or until the eggplant is soft.
Step 3
Once the eggplant is soft, remove and wait until the eggplant is cold, then cut the eggplant. After slicing the eggplant with a knife, cut it at an angle so that the spices will penetrate perfectly.
Step 4
Bake the eggplant on a Teflon plate then spread all parts of the eggplant with the sauce that was prepared earlier.
Step 5
Don't forget to turn it over and over while baking so that everything is absorbed perfectly.
So, if you want it a little spicy, you can add more chili sauce to the sauce mixture. Then see how this dish will tempt you all.
