I've been feeling increasingly rotten over the last month which I'm putting down to my continued membership in the unemployed club. It's amazing how mental darkness can quickly start to impact one physically so I've had to take action to ensure I don't get caught in a rut. I guess if I'm feeling naff and feel like I really can't be arsed with anything then this will come across in any job applications.

I've always enjoyed cooking and want to explore the world of meat free meals and aim to try something new, twice a week for the next month. My first new meal is advertised as a breakfast dish but I had it as a light Sunday lunch whilst the family were out. Not sure I'd have it on its own for breakfast as it isn't particularly filling; it would go nice with some baked beans with toast on the side.

OK, it doesn't look great in the pan but looks aren't everything ... even though we apparently eat with our eyes!

Dead easy to make. Finely dice and onion and soften for about 5 minutes. I started with the lid off but then put it on for 5 mins or so to help them soften. Add mushrooms and some thyme; I didn't have fresh as per the recipe so just used dry - lid on and cook for a further 5 minutes stirring occasionally. Lob in some sliced tomatoes, paprika (I used smoked) and season. Cook until the tomatoes have gone mushy. That's pretty much it!

I whacked a poached egg on mine to add some protein.

I got the recipe from the BBC Food Website

It really is rather tasty.
