Hi bloggers and food lovers, how are you all doing? Hope you’re having a great day, guys. Do you like chewy treats like mochi? Yeah, yesterday I just made some mochi myself, the chewy texture paired with a sweet cream filling is the best part when you take a bite. I’ve been really into strawberries lately, and since I had some in the fridge, I decided to make strawberry mochi this time. Okay, let’s get right to it

Ingredients:

  • 120 grams glutinous rice flour
  • 20 grams cornstarch
  • 200 ml strawberry milk
  • a pinch of salt
  • 1 packet vanilla powder
  • 1 tbsp margarine
  • 50 grams toasted cornstarch
  • 100 grams powdered whipped cream
  • 2 tbsp sweetened condensed milk
  • cold water
  • sliced strawberries

Instructions:

  • Put the glutinous rice flour into a bowl

  • Add the cornstarch to it

  • Pour the strawberry milk into the bowl

  • Stir until well combined

  • Strain the mixture to remove any lumps

  • Steam the mochi mixture for about 20 minutes over low heat

  • While waiting for the mochi to cook place the whipped cream powder in a bowl

  • Add the sweetened condensed milk

  • Add cold water to the bowl

  • Beat the mixture until the whipped cream forms stiff peaks

  • Add the strawberry slices and stir until well combined

  • Set aside or chill in the refrigerator briefly

  • Remove the mochi mixture and spread margarine on top

  • Stir while still hot using a spatula, or flip it back and forth with a silicone mat until the dough becomes smooth and elastic

  • Sprinkle with toasted cornstarch, then divide the dough into 8 portions

  • Take a portion of dough and sprinkle it with toasted cornstarch before rolling it out

  • Shape the mochi dough like this

  • Place whipped cream and strawberry slices on top of the mochi

  • Fold the mochi closed and trim off the excess

  • Repeat until all the dough is used up

  • Dust lightly with more toasted cornstarch to prevent sticking

  • Decorate with melted chocolate mixed with margarine to make it look cuter

  • Chill in the refrigerator for about 5 hours, or freeze for 2 hours to achieve an ice cream-like texture

  • The strawberry mochi is ready to eat
