The temperature has dropped a little today so I thought it an ideal time to cook "no chop" pea and broccoli soup. 13 loves this and requested it in the menu this week. Today is the day.
It's so simple and healthy. No oil, no animal products and as per the name, no chopping.
Vegetable stock
Frozen peas
Frozen broccoli
Silken tofu
Parsley
Onion powder
Garlic powder
Nutritional yeast
Seasoning
I won't lie. It all looks a bit iffy in the pan once you've cooked the veg, added the herbs and other bits.
It looks a "little" more edible once it has been attacked with the hand blender.
It's such a love soup though and so very simple. 15 minutes start to end and it'll do us for two evenings worth of suppers (or lunches).
Nutritional yeast is an absolute revelation. I'd heard of it but never had it before getting my hands on this recipe. I think the term is "umami". It's a bit cheesy but not overpowering. I've heard of it being used as a parmasan replacement. It's apparently good sprinkled over salads.
It's a bit of a superfood I gather and enriched with vitamins and stuff. I gather it's important to add at the end and not cook it too much.
