There is nothing quite like the rich aroma of a freshly cooked Chicken Karahi to make a weekend feel special. Today, I am sharing a simple, traditional, and fast recipe that brings authentic street-style flavors right into your home kitchen with minimal ingredients.
Ingredients Required:
Chicken: 500g (cut into small curry pieces)
Tomatoes: 4 medium (chopped or halved)
Spices: Red chili flakes, cumin powder, coriander powder, and salt to taste
Aromatics: Freshly crushed ginger-garlic paste and green chilies
Finish: Fresh coriander, julienned ginger, and a squeeze of lemon
Step-by-Step Method:
Searing: Heat oil in a deep pan or traditional wok (karahi). Add the chicken and sauté on medium-high heat until it changes color and locks in its juices.
Building the Base: Stir in the ginger-garlic paste and tomatoes. Cover with a lid for 5–7 minutes to let the tomatoes soften and create a rich gravy base.
Spicing & High Heat: Remove tomato skins if preferred, add all ground spices, and fry on high heat (bhunai) until the oil naturally separates from the masala.
Garnish: Finish with slit green chilies, freshly chopped coriander, and raw ginger strips for that classic aroma.
