Country Chicken Curry recipe : A Taste of South Asian Heritage
If you’ve ever tasted a dish cooked in a traditional South Asian kitchen, you know that Desi Chicken (Country / Free-Range Chicken) holds a special place in our hearts and palates. Unlike fast-growing broiler chickens, Desi Murgi(chicken) is lean, flavorful, and packed with an intense, rich taste that brings back nostalgic memories of family gatherings and home-cooked meals.
Today, I’m excited to share a step-by-step recipe for preparing a classic, aromatic Desi Chicken Curry the kind that simmers slowly in spices until the gravy turns rich, deep, and deeply comforting!
Rich Flavor: Free-range chickens have firmer meat that absorbs spices deeply during slow cooking.
Healthier Choice: Raised naturally with higher protein and less fat.
The Perfect Gravy (Jhol): Produces a thin, incredibly warm, and spiced broth that pairs perfectly with warm rice.
Ingredient :
Desi Chicken (cut into medium pieces)
1 kg
Onions (thinly sliced) : 2 cups
Ginger Paste : 1.5 tbsp
Garlic Paste : 1.5 tbsp
Vegetable oil : 4–5 tbsp
Turmeric Powder : 1 tsp
Red Chili Powder : 1.5 tsp (adjust to taste)
Cumin Powder : 1 tsp
Coriander Powder : 1 tsp
Whole Spices (Cardamom, Cinnamon, Cloves, Bay leaf) : 3-4 each
Garam Masala Powder : 1/2 tsp
Salt : To taste
Warm Water : 3–4 cups
Step-by-Step Cooking Method
Step 1 :Temper the Whole Spices
In the oil, toss in the bay leaves, cardamom pods, cinnamon sticks, and cloves.
Let them sizzle for 30 seconds until aromatic.
Step 2. : Fry the Onions & Aromatics
Add the sliced onions and saute on medium heat until golden brown.
Add ginger paste, garlic paste. Cook for 2–3 minutes until the raw smell disappears.
Step 3. : Spice Mix (Koshao)
Lower the heat and stir in turmeric, red chili, cumin, coriander, and salt.
Add a splash of water so the spices don't burn. Cook until oil starts separating from the masala base.
Step 4. : Cook the Chicken
Add the washed chicken pieces to the spicy masala.
The Golden Rule: Fry and stir the chicken continuously on medium-high heat for 10–15 minutes (Bhuna/Koshao). Desi chicken needs time for its meat to firm up and absorb the spiced oil.
Step 5. : Slow Simmer
Add 3–4 cups of warm water for gravy.
Cover the pot with a tight lid and let it simmer on low-medium heat for 30 to 45 minutes (or pressure cook for 4–5 whistles) until the meat is tender and juicy.
Step 6. : Final Touch
Sprinkle freshly ground Garam Masala on top.
Remove from heat and let it rest covered for 5 minutes before serving.
Serve hot with: Steaming hot Basmati or Kalijira Rice .Fresh lemon slices and green chilies .A side of cucumber and onion salad .
