There is something deeply satisfying about sitting down to a hot, home-cooked meal at the end of a long day. Today, I want to share a glimpse of my dinner night—a classic comfort food combination that never fails to warm the heart, soft Red Whole Wheat (Lal Atta) Rotis served with delicious Chicken Curry.

Red Atta (unrefined whole wheat flour) is not only nutritious and packed with fiber, but it also gives rotis a rustic texture and rich, nutty flavor. Paired with a spiced chicken gravy, it makes for the perfect wholesome dinner.

Here is how you can make soft, fluffy Red Atta Rotis at home!

Soft Red Atta Roti Recipe

Making rotis with red wheat flour can sometimes be tricky because it absorbs more water than processed white flour. Follow these simple steps to get them soft and fluffy every time.

Ingredients:

Red Atta (Lal Atta): 2 cups
Warm Water: 1 cup (adjust as needed)
Salt: ½ teaspoon
Oil: 1 teaspoon (optional, for extra softness)

Step-by-Step Instructions:

Kneading the Dough (The Key to Softness)

In a large mixing bowl, combine the Red Atta and salt.

Gradually pour in warm water a little at a time while mixing with your fingers.

Knead firmly for 5–7 minutes until you achieve a smooth, soft, and non-sticky dough. (Tip: Add a teaspoon of oil at the end and knead for another minute to retain moisture).

Cover the dough with a damp cloth or bowl and let it rest for 15–20 minutes. Do not skip this step—it lets the gluten relax and makes rolling much easier!

Shaping and Rolling

  1. Divide the rested dough into equal-sized small balls (lemon-sized).

  2. Take one dough ball, smooth it between your palms, and lightly dust it with dry flour.

  3. Using a rolling pin, roll it out evenly into about 6–7 inches in diameter or square.

  4. Cooking the Roti

  5. Heat a flat skillet or tawa over medium-high heat.

  6. Place the rolled roti onto the hot tawa. Cook for 20–30 seconds until tiny bubbles start to form on top.

  7. Flip it over and cook the other side for about 30–40 seconds until light brown spots appear.

  8. Puffing up: Use a clean kitchen towel to gently press the edges of the roti, or transfer it directly onto an open gas flame using tongs for a few seconds. It should puff up like a balloon!

  1. Remove from heat and brush with a little ghee if you like. Keep them stacked in a covered container or cloth to keep them soft.

The Dinner Experience

We served these piping hot, soft red wheat rotis , fragrant chicken curry cooked with onions, garlic, ginger, and aromatic spices. The subtle, hearty taste of the red flour soaked up the flavorful gravy perfectly.

Simple home-cooked meals like this truly bring the best joy at the end of the day.
