A Warm & Healthy Bowl of Home: Bangladeshi Style Winter Mixed Vegetable Bhaji
Hello, wonderful Hive community
Today, I’m excited to share a simple, aromatic, and comforting recipe for Bangladeshi Mixed Vegetable Bhaji . It’s quick to whip up, pairs wonderfully with hot rice or soft flatbreads (roti/paratha), and packs a punch of nutrition and flavor.
Ingredients
Cooking Oil: 2–3 tablespoons (mustard oil or regular vegetable oil)
Onions: 1 medium-sized, finely sliced
Garlic: 1 tablespoon, finely chopped or minced
Green Chilies: 4–5, slit (adjust according to your spice preference)
Tomatoes: 1 medium, chopped (adds a lovely tanginess)
Winter Vegetables:
Cauliflower : Cut into small, bite-sized florets
Carrots : Peeled and diced .
Flat Beans / Hyacinth Beans : Cleaned, strings removed, and cut into sliced .
Spices & Seasoning:
Turmeric powder: 1/2 teaspoon
Salt (to taste)
A pinch of cumin powder or coriander powder (optional, for extra depth)
Fresh Coriander Leaves: A handful, chopped (for garnishing)
Step-by-Step Cooking Guide
Step 1: Heat the Oil and Build the Base
Place a pan or skillet over medium heat and add your cooking oil. Once the oil is hot, toss in the sliced onions and chopped garlic. Sauté them until the onions turn translucent and soft, and the garlic releases its wonderful, inviting aroma.
Step 2: Add the Spice & Tangy Tomatoes
Next, drop in the slit green chilies and chopped tomatoes. Stir them well into the onion-garlic mixture. Add a pinch of salt to help the tomatoes break down faster. Cook this mixture for 2–3 minutes until the tomatoes soften into a thick, flavorful base.
Step 3: Introduce the Star Vegetables
Now it’s time for the main event . Add your prepared cauliflower florets, diced carrots, and beans into the pan.
Step 4: Season and Saute
Sprinkle the turmeric powder and remaining salt over the vegetables. Toss everything together vigorously so that the golden-yellow oil and onion-tomato mixture coat every single piece of vegetable.
Step 5: Cook to Perfection
Cover the pan with a lid and let the vegetables cook on medium-low heat for about 5 to 7 minutes. The vegetables will release a little bit of their natural moisture, which will help steam them to tenderness.
Tip: Stir occasionally to prevent sticking at the bottom.
Once the carrots and cauliflower are tender yet retain a slight crunch, remove the lid and turn the heat up slightly for a minute to let any excess moisture evaporate.
Step 6: Garnish & Serve
Turn off the heat and scatter fresh, chopped coriander leaves all over the top. Give it a gentle mix. The fresh herbal aroma of coriander paired with the spiced vegetables is absolute magic .
It’s healthy, completely vegan, and brings the true taste of home-cooked comfort to your dining table.
Happy cooking, and see you in the next post.
