Jackfruit (vegan meat) Curry | Step-by-Step recipe + preservation process.
Unripe jackfruit vegetable is one of our common meals during summer. But the processing is time-consuming, also it's not highly available everywhere, so this meal is something really special for me.
A few days ago, I found a Facebook marketplace that was selling unripe jackfruit. The price was high but I didn't hesitate to buy it. Because it's been two years since I didn't try this recipe.
I was super excited because I almost forgot the taste. The taste of jackfruit is almost like processed meat. The thin pieces inside the fruit taste like shred meat. And big chunks are almost like meat. Well, not similar but it's not like any other vegetable either. Also, if you don't like the smell of ripe jackfruit you can easily try the unripe one because it doesn't smell anything bad. The taste is worth trying.
This curry is a complicated recipe and needs a lot of processing along with a lot more ingredients. You can check This Recipe for the full detail, what else you can prepare with jackfruit, detailed ingredients; everything.
Let me share the recipe.
Cutting and Washing process
Cut open jackfruit in half and remove the inner side. You will see a lot of glue/sticky liquid when you cut off the fruit. Use hand gloves and oil to remove the glue. Peel off the upper portion/the green skin and cut the inner side into big pieces.
Here's YouTube Video where you will find full detail of the process.
Then boil the pieces with salt.
Strain them and wash them with cold water.
You can preserve some after washing and air drying for half an hour in the deep fridge for a whole year. It will be as good as fresh. But try to eat in between three months for better taste.
Let's see the cooking process.
Cook the spices in the pan. I have shared a link above where you will find full detail of the ingredients.
The masala/spice is ready to put on the jack fruit.
Add the fruit pieces.
Flip and cook it properly for 10 minutes on medium heat.
Add some water, put a lead on, and cook it for 15 minutes. It takes time to properly cook it, flip in between, and add water if needed.
Add some green chili slices if you want.
Some melted butter/ghee.
And mixed masala/spice powder before turning off the heat.

And it's ready to serve!
After cooking, the curry will become soft and mushy. We usually add a lot of ingredients so it's super delicious and full of fragrance. Also, it's very spicy but you can reduce the chili powder or green chili as per your taste. The seeds and the meat of jackfruit are a good combination.
Try it at least once and you will be a fan.
