I was short on time today and wanted something quick for lunch—something that didn’t require a lot of preparation, of course. I enjoy cooking, but sometimes I appreciate taking the easy route. So I decided to cook some smoked chorizo, since this sausage is pre-cooked, which makes the task easier.

Ingredients:

  • 2 smoked chorizos
  • 7 sweet peppers
  • 2 small onions
  • Oil
  • 1/4 cup water
  • Salt to taste

Preparation:

I washed the herbs, removed the seeds from the chili peppers, and diced them. Then, I peeled the outer layer off the onions and chopped them into small pieces.

I heated a skillet with a splash of oil, then added the herbs and cooked them over low heat. They softened in five minutes. I immediately washed the smoked chorizo, sliced it, and added it to the herbs. I stirred well and adjusted the salt to taste.

Then I poured in the water, put the lid on, and waited a few minutes until the chorizos doubled in size—a sign that they were ready. The aroma and flavor also hinted that I was in for a delicious treat.

Of the various types of chorizo, I chose this one because it doesn’t release the fat that characterizes others like the criollo or garlic varieties—which are the best-selling ones. The smoked variety is healthier in that regard, although the carupanero is the most popular; however, it’s very hard to find a high-quality one.

To round out my lunch, I also made some cornmeal arepas, which I had ready in less than half an hour. I have to admit that I’m hooked on the smoky flavor—I think in the last few weeks I’ve had pork chops, bones, ribs, and now these chorizos. I really enjoy giving these dishes that home-cooked flavor.

Hoy estaba apremiada con el tiempo y quise almorzar algo rápido, por supuesto que no ameritara una preparación exhaustiva, disfruto cocinar pero, en ocasiones, agradezco los caminos prácticos. Decidí entonces guisar unos chorizos ahumados, pues este embutido, al estar precocido, facilita la tarea.

Ingredientes:

  • 2 chorizos ahumados
  • 7 ajíes dulces
  • 2 cebollas pequeñas
  • Aceite
  • 1/4 de taza de agua
  • Sal al gusto

Preparación:

Lavé los aliños, extraje las semillas de los ajíes, corté en cuadritos. Posteriormente, retiré la primera capa de las cebollas y dividí en pedazos pequeños.

Monté un sartén con una medida de aceite, allí coloqué los aliños a fuego lento. Se ablandaron en cinco minutos. De inmediato lavé los chorizos ahumados y los corté en rodajas, agregándolas a los aliños, removí muy bien y ajusté el punto de sal.

Después vertí el agua, coloqué una tapa y esperé algunos minutos hasta que los chorizos duplicaran su tamaño, este es un indicio de que la preparación está lista. El aroma y el sabor también avisaban que comería algo delicioso.

De la variedad de chorizos me inclinó por esta opción porque no destila la grasa que caracteriza a otros como el criollo o el de ajo, los que más se venden, siendo el ahumado más sano en ese sentido, aunque el más solicitado es el carupanero, pero el de calidad es muy complicado de conseguir.

Para completar mi almuerzo, y de forma paralela, preparé unas arepas con harina de maíz, en menos de media me serví. Admito que el sabor ahumado me tiene cautiva, creo que en las últimas semanas he degustado chuletas, huesos, costillas y ahora estos chorizos, de verdad que disfruto darle a estos productos una sazón hogareña.
