Good day, dear friends! How are you all? Today, I’m excited to join the vegetarian platform to share a delicious and nutritious recipe made with gourd. Bitter Gourd is a valuable medicinal vegetable known for its health benefits. Although some people may be hesitant to try it due to its bitterness, it’s a highly beneficial vegetable that can help treat various ailments in our body. The way I prepare it removes the bitterness, making it enjoyable for everyone. I even include the nutrient-packed seeds, which are believed to have anti-cancer properties. So, let’s see how to prepare this curry that pairs perfectly with rice as a main dish.

Materials Used.

Bitter Gourd 200g.
4 Tablespoon of tamarind.
1 Teaspoon of mustard seed.
2 Teaspoon of chili powder.
2 Teaspoon of curry powder.
Salt as needed.
Coconut oil 100ml.

Finely chopped curry leaves a little bit.
A piece of chopped rampe.
1 small chopped onion.
3 or 4 cloves of garlic, finely chopped.
1 small green chilli pods.
1 chopped tomato.
2 cloves.
2 cinnamon sticks.

The cooking process as follows.

Now we are ready to prepare this delicious curry. For that, first wash and clean the Bitter Gourd and cut it into thin round slices along with the seeds.

Next we take a vessel and add coconut oil to it. Put it on the stove and after it gets hot, fry the cut bitter gourd slices in it.

Now we take it again in a clay pot and keep it on the stove. Add about two spoons of coconut oil to it. After it gets hot, add mustard seed to it. Add onion, garlic, cloves, cinnamon, raw chillies, rampe, Salt , curry leaves to it and mix well. Fry it for about 2 minutes.

Next we add chili powder and curry powder and mix well. Tomatoes are also added to it and mixed.

Next we add the fried Bitter Gourd to it and mix it. Add some tamarind juice to it and cook on low flame for about 4 minutes and remove from the stove.

There are many pleasant surprises once this is done. This recipe can also be kept for 2 or 3 days and added to other dishes. If you like, you can add a pinch of sugar while cooking to enhance the flavor. It's a unique culinary experience, and I hope you'll try preparing it this way too.
