Kiribath, or Sri Lankan Milk Rice, is a traditional and much-loved dish prepared by cooking rice with creamy coconut milk. It is especially popular during special occasions, celebrations, and important family moments, but it is also a wonderful homemade breakfast that can be enjoyed on an ordinary day.

Materials Used.

400g white rice
Salt, as needed
2 cups thick coconut milk
3 cups thin coconut milk
A pinch of turmeric powder
2 cardamom pods
1–2 pieces of rampe (pandan leaves

The cooking process as follows.

Now, let’s get ready to prepare the Kiribath. First, take a cooking pot and add the washed rice. Then, add the thin coconut milk, cardamom, rampe (pandan leaves), and a pinch of turmeric powder. Place the pot on the stove and allow the rice to cook well.

Next, when the rice is almost cooked, add the required amount of salt and the thick coconut milk. Mix everything well and allow it to cook until the coconut milk is well absorbed and the rice becomes soft and creamy.

Once the coconut milk has been fully absorbed, remove the Kiribath from the cooking pot. Then, transfer it to a wide, shallow dish and spread it out evenly, as shown below. Leave it for about 30 minutes to cool and set. Once it has firmed up, you can cut it into pieces and serve.
