Have you heard of aquafaba before?
It is a quite commonly used product in the plant-based food context. Usually it refers to a leftover liquid from the canned chickpeas and in most cases it is suitable for replacing eggs. 🐣

I usually use it for vegan mayo (Recipe here) but it is very useful for baking so I tried to put it in pancakes this time πŸ₯ž
Pancakes are not as fluffy because I used banana but feel free to replace it with more sugar or add more flour πŸ‘©β€πŸ³

You will need (for 10 small/medium pancakes)

  • 75 g. wheat flour
  • 0.5 teaspoon baking powder
  • 50 ml. aquafaba (liquid from canned chickpeas)
  • 1 small ripe banana
  • 2 tablespoons lemon juice
  • 90 ml. soy or other plant-based milk
  • 1 tablespoon sugar
  • 1 teaspoon coconut oil (for baking)

Instructions:

  1. Whisk the aquafaba to a froth (whisk for about a couple of minutes), then add lemon juice, milk and mix.
  2. Add mashed (with a fork) banana to the mixture.
  3. Add flour, baking powder, sugar to the mixture. Mix until smooth.
  4. Heat a pan with coconut oil, add 1-2 tablespoons of dough for each pancake and bake on both sides until lightly browned. You can add oil in case the pancakes stick to the pan.
