I have been buying a cauliflower on my weekly shop for years. I used to use it for various things, but since I came across these hot wings, I only ever use it for them now. They're so good!!
Ingredients
¾ cup all-purpose flour (95 g)
1 tsp paprika
2 tsp garlic powder
1 tsp salt
½ tsp pepper
¾ cup milk or milk alternative (180 mL)
1 head cauliflower
¼ cup hot chili sauce (70 g) - I used Sriracha
2 tbsp coconut oil or vegetable oil
1 tsp maple syrup
Method
Preheat the oven to 450˚F (230˚C). Line a baking sheet with parchment paper (I used a silicone sheet)
In a large bowl add the flour, paprika, garlic powder, salt and pepper
Add the milk a bit at a time, stirring continuously to prevent the batter going lumpy.
Break the head of cauliflower into florets, about 1½-inches wide.
Add the cauliflower florets to the batter, making sure each piece is evenly coated.
Arrange the coated cauliflower on the baking sheet. If there's too much batter for the amount of cauliflower, leave it in the bowl. If it pools on the sheet then things get a bit messy. You want perfectly coated florets with no excess batter on the sheet.
Bake for 20 minutes, flipping halfway.
Meanwhile, in a small bowl, combine the hot sauce, coconut oil and maple syrup and stir until evenly combined.
Take the wings out of the oven, brush the hot sauce mixture on them and put back in the over to bake for another 20 minutes.
Let cool slightly before gobbling them all up.
Seriously these things are so good. Even my non-vegan friends can't get enough of them! And they're cauliflower - cruciferous vegetables that contain anti-cancer phytochemicals.
