Palm sugar cake is a classic cake that’s quite popular; it was a favorite among people in the old days. Back when there weren’t as many varieties of cake as there are today, this old-fashioned palm sugar cake was the best-selling one. I used to enjoy this cake during family gatherings at my grandmother’s house; she would often order it from a neighbor because she loved it so much. To ease my longing for my grandmother, this cake inspired me to try making it myself.
Actually, this is the first time I’ve tried making this cake; my husband has always asked me to bake it. And yeah, this is the perfect time to make this old-fashioned palm sugar cake at home.
The process is quite easy, and baking it doesn’t take long. While it’s baking, get ready to smell the aroma of palm sugar wafting from the cake—oh, that scent fills the whole house. Curious about the steps? Let’s check out the recipe and the process below.
4 eggs
200 grams palm sugar
½ teaspoon baking powder
175 grams all-purpose flour
15 grams powdered milk
140 grams margarine (melted)
30 ml vegetable oil
Crack the eggs and mix them in a mixing bowl with finely chopped palm sugar.
Once the eggs have expanded, add ½ teaspoon of sp and mix again until the batter thickens.
Add the all-purpose flour and powdered milk, and mix on low speed until everything is evenly combined.
Next, add the melted margarine and vegetable oil, and mix everything until well combined.
Pour the batter into a baking pan; don’t forget to tap the pan to release any air bubbles, then bake at 180 degrees Celsius for about 45 minutes. Or you can adjust the time based on your oven.
Once baked, the palm sugar cake fills the air with a wonderful aroma; it’s moist with a soft texture. The palm sugar provides just the right amount of sweetness, and it’s not cloying at all when enjoyed. I made this cake specifically because my husband requested it last weekend. He loves cake so much that I’ve been learning lots of new cake recipes.
Well, this palm sugar cake is very unique—even though it’s an old-school recipe, it’s incredibly delicious and different from most cakes. Plus, the aroma of palm sugar gives it an extraordinary flavor to enjoy—and yeah, enjoying it with a cup of tea alongside my husband is also really great.
