Vegetable Pecel (Traditional Vegetable Salad)
Pecal is a dish that resembles a salad, and is combined with several types of boiled vegetable. And add with peanut sauce which has a distinctive taste and aroma.
Seeing vegetables that thrive in the garden, always makes me excited to process them into a tantalizing dish. Cassava is a kind of tuber that I plant behind the mess where I work now, now the plant is over 1 year old. There are several reasons why I plant cassava, apart from liking this type of plant, both the leaves and tubers, I also grow it for my needs, so that is to reduce the cost of buying it on the market. Not many people know that cassava is one of my favorite root types. Processed in any form, I like it, even if it's just boiled, I devour it perfectly.
Cassava leaves which are abundant in the garden lately, thrive and are very fresh, this is due to the continuous rain that hit the area where I live. Some of it I harvest, to be processed into something delicious to be enjoyed with my friends here. I always think of the best combinations of vegetables for dishes that have great taste. Do you agree, especially when combined with delicious spices, it adds a very unique taste.
Materials used
- Cassava leaves 1 bunch
- 300 grams of long beans
- 100 grams of bean sprouts
- A pinch of tamarind (optional)
Softened Seasoning
- 300 grams of peanuts
- 6 red chilies
- 5 small chilies
- 1 candlenut
- 6 pieces of garlic
- 3 cm kencur
- Red sugar to taste
Cooking Steps
In making pecal or vegetable salad, you have to pay attention to the steps I'm taking below, so that your pecel tastes good and has a texture that fits your tongue. So, here are the steps for preparing a spicy pecal or vegetable salad.
STEP 1
First I prepared the vegetables by boiling all the vegetables in a pan using enough water.After boiling, drain the vegetable water, then cut the cassava leaves into small pieces and don't forget to also cut the long beans.
STEP 2
After the vegetables were done, I started preparing the seasoning. Prepare the ground spices, the first way I fry the peanuts until cooked with just a little oil here I only use 2 tablespoons.
STEP 3
Then grind the peanuts using a pestle or chopper, just grind it coarsely, not too finely.
STEP 4
After the peanuts are mashed, then I fry the fried chilies, garlic and candlenuts with a little oil.
STEP 5
Then puree the chilies and garlic and hazelnut, then blend, then add the sugar and blend again.
STEP 6
Then mix the spices that have been mashed with the peanuts that have been pounded.
STEP 7
Then season with salt and add tamarind (optional) or you can replace it with a little vinegar.
STEP 8
Sauté until the spices dry so they don't get stale easily. Make sure there is no more water content in the spices.
Serving Suggestions
Serve the pecal on your plate by stirring the spices with all the vegetables that have been boiled earlier. Stir in enough spices. Stir the seasoning with the vegetable pieces, add a little warm water, here I only stir it once, I stir the rest right when I eat it again to prevent the pecal from lasting longer. Now, apart from vegetables, I also added boiled stick noodles, the composition of which I have read is made from vegan. Friends it's not just noodles, you can use any noodles, but this is optional depending on individual tastes.
A information about this vegetable salad or what is often known as pecal, in my area it is eaten with a combination of warm white rice, and is usually enjoyed in the morning. Not only that, pecal jiga is sold everywhere at breakfast time. Apart from having a very good taste, in my opinion, this is a traditional food that is very healthy and certainly very pleasing to the tongue.
