The first meal after arriving in India.
Hello, friends, food lovers, and community greetings! Hope you all are doing well and having a good time with your loved ones. I am finally back here in this world.
Made many different foods in India, but didn't get to post them due to many complications.
So now is the time I can post some nice and healthy food here.
Today is a simple but healthy vegetable soup. After we arrived home, we were in jetlag and taking it easy. We had some bread I carried from Norway. After a quick visit to the local market, we got very nice and fresh vegetables from the local village market. Seeing those, I couldn't control myself from using them. So I made this simple soup for our lunch.

After shopping for the vegetables, we sort them, clean, and wash them before storing. Some go in the refrigerator, while others stay out.

$1All vegetables are cleaned and Chopped

Ingredients:
1 spring onion, quite a big one.
1 carrot
2 green paprika
2 small potatoes
100 grams of green beans
2 tomatoes
4-5 cloves of garlic
1 white onion from spring onion.

Spices:
2 fresh allspice leaves
2 cm cinnamon
1 star anis
1 tsp salt
1 tsp soup masala
A handful of fresh coriander
1/2 lime.

Heated oil in a pan
Added whole spices
then garlic and onion and stirred it well.

Then added one by one chopped vegetables. stirring them well

Chopped coriander

Lime juice and enough water to soften vegetables.

Cooked for around 15 minutes on medium heat. Discard the all-spice leaves.
And the soup is ready.
