ENGLISH.

Greetings beautiful vegan community, happy Friday! it's a pleasure to be back among you and to share with you one more recipe ❤️

I have always had a love hate with the Sweet Potato, in a publication that I shared with you a few weeks ago I told you about it, the only way to eat it was fried, because that's how our mother taught us to eat it, honestly I could not eat it any other way, but as I have been researching healthy recipes for a long time, it has had to be like that for my health, because I have discovered amazing recipes full of nutrients.

Now I not only know how to make an exquisite Sweet Potato Cream with Coconut Milk, that was a resounding success at home, again in my quest to eat more vegetables, I found on the internet a delicious way to give a new use to my sweet potato hahahaha, this dish is inspired by a recipe that has a lady on a youtube channel, the name of her channel is Lloyd Lang, and when I saw the way she eats sweet potato immediately caught my attention.

So inspired by that recipe and with practically all the ingredients at hand I got to work, of course I put my good personal touches😊.

Please join me in preparing this delicious recipe.

Ingredients:

  • 300 Grams of Sweet Potato.
  • 240 grams of avocado.
  • 1 cup of lentils previously cooked, in my case I cooked them with pieces of carrot to give it a little more nutrients.
  • 6 roasted garlic, or half a head.
  • 2 tablespoons of Tahini (sesame paste).
  • 1 regular size tomato.
  • Half a Red Onion.
  • 3 sprigs of Cilantro.
  • 5 tablespoons of plain water.
  • Juice of 1 Lemon for the Hummus.
  • Half a lemon for the guacamole.
  • Half teaspoon of Cumin.
  • 75 ml of cold water.
  • 75 ml of Extra Virgin Olive Oil.
  • Salt to taste, I used 1 and 1/2 teaspoon.
  • Chili or hot bell pepper (optional).

Preparation:

We start by preparing our Hummus.

In a food processor we are going to add the Tahini paste, the roasted garlic, the 5 tablespoons of plain water and the half teaspoon of cumin.

Process well until a smooth paste is obtained. Set aside.

Now in the blender we are going to add the Lentils, the cold water and the olive oil, blend very well.

Once blended, add the reserved Tahini paste and blend again.

Add the lemon juice and a teaspoon and a half of salt.

Blend very well, and you will obtain a smooth, delicate and delicious cream.

Place in a bowl and set aside.

Preparation of the Guacamole.

We take the avocado and mash it very well, it is very easy to do it with a fork.

Now we chop the tomato and the onion very small, we add it to the avocado.

At this point I add the chili bell pepper or hot bell pepper, this step is optional, and I also add the cilantro, which I chop very small. I mix.

Now I add a teaspoon of salt.

And the juice of half a lemon.

Mix and our Guacamole is ready.

Preparation of the Sweet Potato or Sweet Potato.

After having washed and peeled the sweet potatoes, cut them lengthwise, mine were very small, but if you have those sweet potatoes that are large the result is more beautiful.

In a baking pan place the sweet potatoes, if you like, add a little salt, just a little, and a little olive oil, for these recipes I usually use extra virgin olive oil, but you can use whatever you have.

I put in the oven that has been previously preheated.

And when they are a little browned we take them out. We wait for them to cool to room temperature.

Now we take both the Hummus and the Guacamole and we are going to put it on top of the baked Sweet Potatoes. First put the Hummus you can use a spoon and then put the Guacamole on top.

And that's it my dear friends! Let's enjoy this delicious and healthy snack.

Note: The amounts of the ingredients for the Guacamole may vary, that will be to your taste if you want to add more or less than the amounts I give in this recipe, this dish is really worth it, I invite you to prepare it 😊.

I say goodbye with a see you later, Happy weekend and blessings🙏💕

  • Media Cebolla Morada.
  • 3 Ramitas de Cilantro.
  • 5 Cucharadas de Agua al natural.
  • El Jugo de 1 Limón para el Hummus.
  • Medio Limón para el guacamole.
  • Media cucharadita de Comino.
  • 75 Ml de Agua bastante fría.
  • 75 Ml de Aceite de Oliva Extra Virgen.
  • Sal al gusto, usé 1 y 1/2 Cucharadita.
  • Ají o Chile picante (opcional).

Preparación:

Comenzamos preparando nuestro Hummus.
