Pork With Vegetables In The Oven

Hello, chefs! 😋

Pork with vegetables can be prepared in many different ways, but we prefer to cook it in the oven at home.
Why in the oven? There is no particular reason, except that it gets the least dirty because you put all the ingredients in one pot :)

Because some people don't use pork in their diet, you can use chicken or beef, but then you have to adjust the cooking times in the oven.

The preparation is very simple, all the ingredients are cut into large pieces and put in one container with the meat, and put in the oven.

What do you need for 4 servings?

  • 4 pork chops on the bone (you could use any other meat but we like the chops on the bone best this way);
  • 3-4 large potatoes (I have peeled and cut them);
  • 2 carrots
  • 2 peppers
  • 2-3 tomatoes
  • 2 onions
  • 1 piece of celeriac (200 grams)
  • 3-4 cloves of garlic
  • salt, pepper
  • spices of your choice

First, prepare all the vegetables by cutting them into large pieces.

Salt and pepper the meat well.

Prepare a marinade from the spices and olive oil with which to coat all the ingredients.
Add the spices according to your taste, I added oregano, thyme, curry, salt, pepper. Mix well.

We have everything ready and we start to assemble the dish. I usually start with baking paper so that the food doesn't stick to the bottom of the dish when baking.
Place the first row of vegetables - onions, celeriac, carrots - on the baking paper and brush with the marinade.

Continue with the pepper and garlic pieces. Spread with marinade.

Now it's the potatoes' turn. Again, coat with marinade.

Now it's the tomatoes' turn.

We are left with the cutlets, which we place on top and pour the rest of the marinade over them.

Preheat the oven to 200 degrees Celsius, wrap the tray with our pork and vegetables in aluminum foil and place in the oven for a good hour.

Now we can take a break for an hour or so. A walk? Cleaning up the kitchen? You decide :)

After a good hour in the oven, the dish is ready. Take it out and remove the aluminum foil. The vegetables are tender, the meat is just as tender. If it's still not enough for your taste, let it go in the oven for a while longer.

Mine looks very good.
