Chicken & Potatoes, always a good idea

Are you also one of those simple people who, when it comes to food, can eat the classic combination of chicken and potatoes every day? 馃槉 I think there are quite a lot of us.

Today, I decided to prepare it this way because it was the quickest and easiest option for me.

This time I used the following:

1 chicken without the breast meat (you can use it with the breast meat too, I just happened to have it this way in a bag in my freezer)
5 medium potatoes
70 ml yogurt
1 level teaspoon mustard
1 teaspoon paprika
1/3 teaspoon pepper
1/2 teaspoon garlic powder
1 tablespoon lard
1 tablespoon olive oil
salt to taste

I took the chicken pieces out in the morning and put the whole bag into a bowl of cold water, as this is the easiest way to defrost them. After just a couple of hours, I could easily start preparing lunch.

I put it into a baking dish and sliced the previously peeled potatoes into thinner pieces. I seasoned everything with salt first. I usually do this by eye, so I add a pinch of salt, then a little more salt, and a little more, until I decide it is enough. 馃榿

Then, in a small bowl, I mixed the yogurt with all the marinade ingredients: pepper, paprika, mustard, garlic powder, lard and olive oil. I then poured it over the meat and potatoes and rubbed everything in well with my hands.

Oh yes, before I started preparing the marinade, since everything goes really quickly, I turned on the oven to preheat to around 200掳C.

I covered the marinated meat in the baking dish well with aluminum foil and put it into the preheated oven to slowly cook while soaking up all the wonderful flavors from the added spices. 馃槉

It baked for about 40 minutes when I took it out of the oven, removed the foil completely, and used a spoon to scoop up the juices from the bottom of the baking dish and pour them over the meat and potatoes once again. I put it back in the oven to finish cooking until most of the liquid had evaporated and the meat turned golden brown. 馃槉 So, another 15 minutes or so.

And that's ittt, super quick and simple, but soooo delicious. 馃グ

I served it with a fresh cabbage salad and homemade-style bread from the supermarket. I didn't managed to take a photo of it nicely arranged on a plate because we were all very hungry and immediately attacked the hot food as soon as it came out of the oven. So, just a quick funny selfie, while making sure the heat doesn't go through the cloth and burn me, like it did a few days ago. 馃槄

How do you usually prepare chicken? Do you bake it, boil it, or grill it? Maybe in an air fryer? I see that crispy Corn Flakes chicken made in an air fryer is especially popular these days. That must be soooo good. 馃グ
