This week on Hive Top Chef the Topic is "Christmas" For that I will share a recipe for gatherings with friends and family. Today I will share a snack recipe in the form of Dimsum from ingredients that are 100 percent Vegan.
Dimsum is a traditional Chinese food that is well known all over the world. Various dimsum fillings affect the taste of the dimsum itself, some fill it with various processed meats or processed meats and vegetables. today I will make dimsum with tempeh and various vegetables. My children really like dimsum, when I'm preparing the dimsum, the children go back and forth to the kitchen just to see if the dimsum is cooked.
The ingredients
1.Ingredients for Dimsum skin
The ingredients for making dimsum consist of two parts, namely the part for the skin and the second part for the filling. For leather I only use bread flour and starch. The ingredients for making complete Dimsum skin, namely :
300 grams of medium protein flour
3 tablespoons of starch
200 mL of water/to taste
2 tablespoons of cooking oil
2.Ingredients for Filling
The ingredients that I use for my dimsum filling are tempeh, carrots, corn and broccoli with the addition of shallots and garlic and ground pepper to enrich the taste. The ingredients for the complete dimsum filling are :
2 small pieces of tempeh
50 grams of broccoli
1/2 part of sweet corn
1 small carrot
3 cloves of red onion
5 cloves of garlic
1 stalk of celery leaves
1 stalk of leek
1 teaspoon of salt
1/2 teaspoon of sugar
1 Pack of ground pepper
2 tablespoons of cooking oil
PREPARATION
First I will make the Dimsum skin, the method is :
1.Mix bread flour with starch
2.Add water little by little to the flour until a dough forms.
3.Add cooking oil to the flour mixture until a non-sticky dough forms.
4.Leave the dough skin for 30 minutes, cover the dough, I use a bowl that has a lid.
Next I will process the ingredients for the dimsum filling.
1.Cut the tempeh into small pieces, the smaller the better
2.Cut the broccoli into small pieces, the smaller the better, use only the leaves while I don't use the stems for the stuffing.
3.Tear the corn off the stalk
4.Cut the carrots into 2 parts, the first part is small and the other part I grated. Grated carrots for additional filling on top of Dimsum.
5.Finely chop the celery and leek leaves.
6.Thinly slice shallots and garlic
Now I already have the ingredients for the dimsum filling.
How to Cook it
Steps to cook dimsum
1.I will cook the dimsum filling, heat the cooking oil.
2.Saute shallots and garlic until fragrant and wilted.
3.Add all the stuffing ingredients, namely pieces of tempeh, carrots, broccoli, corn, celery leaves and leeks. Stir until all the ingredients are mixed.
4.Add salt and sugar
5.Add ground pepper according to taste, I use a pack of ground pepper because I don't use chilies, we as a family are fans of spicy flavors.Cook all the stuffing ingredients until wilted.
After the stuffing is wilted and then turn off the stove, hmmm the dimsum stuffing that has just been cooked, tempts the taste buds.
6.Take a Dimsum dough skin and make a round shape, flatten it so you can put the dimsum filling in it.
7.Add enough stuffing, then cover the top of the Dimsum, but don't close it tightly, because we will add grated carrots on top.
8.Add the grated carrot on top of the Dimsum, cover the dimsum and leave it slightly open so we can still see the grated carrot
9.It's time to steam the dimsum, steam over medium heat for 25 minutes.
10.After 25 minutes I will check if the dimsum is cooked, I use a stick, insert the stick into the skin of the Dimsum, if there is no dough left on the stick, it means the dimsum is cooked and ready to serve.
Serving method
Serve dimsum while it's warm, our family usually enjoys dimsum with chili sauce and tomato sauce.
Gatherings of beloved family and friends are even more exciting with the warmth of delicious Vegan dim sum.
