Hello friends in the Vegan community, I have never processed white radish before, this is the first time I have processed white radish. White radish has a slightly bitter taste and unpleasant odor, so I don't like it. But today I will process white radish into snacks. I will make crispy and rich radish chips. I don't know whether the experiment of making white radish-based chips will succeed or fail, because white radish has a soft and juicy fruit texture. But I'm curious whether white radish can be processed into chips or not, so I'll still make it.
PREPARATION
Before making white radish chips, I will first process the white radishes. Prepare 500 grams of white radish, 2 tablespoon of coarse salt and 700 mL of hot water.
First step, I removed both ends of the radish.
The next step, peel the skin clean then wash thoroughly until the sap is reduced.
The third step, thinly slice the radish.
The next step, add salt,then stir until the salt is well mixed with the white radish slices.
The next step, add hot water, soak until the water cools down. This method is useful for eliminating the unpleasant smell of radishes and reducing its bitter taste.
The last step, discard the soaking water, then wash the radishes again with running water, after cleaning, drain to reduce the water content.
Now I can process the white radish into chips.
INGREDIENTS
The ingredients that I use to make white radish chips are:
500 grams of processed white radish
4 tablespoons of flour
1/4 tablespoon of salt
2 pieces of garlic
1 candlenut
1 teaspoon of coriander
1 pack of ground pepper (according to taste)
300 mL of cooking oil
180 mL of water
HOW TO MAKE
1.Grind the garlic, coriander, candlenut and salt.
The crushed aroma of garlic, coriander and candlenut will mask the unpleasant odor of the white radish.
2.Add the ground spices into the flour, stir.
3.add water little by little until a slightly runny dough forms.
4.Add ground pepper to taste, stir until mixture is mixed and not lumpy.
5.Enter the white radish pieces into the flour mixture, leave for a moment while waiting for the hot cooking oil.
6.Heat the cooking oil. Make sure the cooking oil is hot to fry the white radish chips.
7.Fry the radish pieces that have been given the batter, when frying, add the radish pieces one by one so they don't stick to one another.
When frying, radish pieces must be submerged in cooking oil.
8.Don't forget to turn the chips over until cooked evenly, fry until brown, then remove.
THE RESULT
White radish chips are ready to be served, I didn't expect the taste to be delicious, not inferior to cassava chips. But the texture is not what I expected, because it is not dry enough. It seems that to make crispy white radish chips, I have to process the radishes in an air fryer before frying. I like to try new recipes to produce different types of dishes.
