I've always been a fan of granola bit it can be damned expensive and the quality variable. I was delighted to see a simple recipe in a cookbook that I'm using to support a calorie controlled, carb restricted diet I'm following. It's delicious! Unfortunately my youngest daughter seems to agree so we get through a lot of it!
The ingredients are:
Coconut oil
Maple syrup
Cocoa powder
Jumbo rolled outs
Chopped mixed nuts
The oil is melted over a low heat and the cocoa and maple syrup added and stirred. The pan it taken off the heat and the oats added and coated in the mixture. These are then placed in 150 C oven for 15 minutes. The chopped nuts are added and baked for a further 10 minutes.
I'd never used coconut oil until now and I have to admit it is fantastic stuff. It adds a hint of coconut flavour but doesn't overpower things. I've also used it in a curry or two.
My daughter and I have a new Sunday evening routine in baking another batch for the week.
