This is another family favourite and a dead easy dish for me to do on Thursdays when the youngest has gymnastics and doesn't get home until late. These mushroom pizzas are a little different than ... well normal mushrooms pizzas. Instead you use big mushrooms as the base replacing pizza dough.
Dead simple to make. I use 4 large mushrooms for two and generally serve a salad on the side.
Mix a decent dollop (standard UK measurement there) of tomato puree in a small bowl, loosen with olive oil and add a minced clove of garlic and as much dried oregano as you like.
Spread the mixture evenly over the mushrooms (bottom side up) and place in an oven proof dish (lightly oiled).
Add your other toppings. Last night I used to Parma Ham, buffalo mozzarella and then some grated mozzarella.
Whack in the oven for around 20 minutes at 180 (ish)
All ready for the oven.
