How are you all? I hope you are doing well.Everyone loves pickles, and you can find many different kinds of pickles in the market. They taste especially good with lentils and other dishes. Today, I want to share a Persian pickle recipe with you called Turshi.You can easily make this pickle at home in a clean and hygienic way. You only need a few vegetables for this recipe.
As you all know, vegetables are very important for our health and have many benefits. In our home, we don't eat many vegetables except eggplant. I want my children to get good nutrition, so I prepare this pickle at home for them. Ingredients
3 kg cucumbers
1 kg carrots
1 large cauliflower
3 glasses of water
1 to 1½ glasses of vinegar
Salt to taste
Turmeric to taste
Some people also add garlic and green chilies, but I didn't use either of them.
Preparation Method
First, wash all the vegetables thoroughly. Then start cutting them into pieces. It takes some time to cut a large quantity of vegetables, so I sat down comfortably and started preparing everything.
I cut the cucumbers into round pieces. Make sure to cut them a little thick so they can absorb the vinegar properly. I also cut the cauliflower into medium-sized florets and the carrots into round pieces.
After washing all the vegetables, boil the carrots and cauliflower lightly in water. Once the water comes to a boil, drain it. I do this to help clean the cauliflower and soften the carrots slightly, as they are a little hard.
Now take a large pot and add approximately three glasses of water and one to one and a half glasses of vinegar. Add salt and turmeric as well, then bring the mixture to a boil.Let it boil for about five minutes. There is no need to boil it for too long. After five minutes, turn off the stove and leave the mixture to cool completely.
Once it has cooled, transfer the pickle into different clean jars or bottles and keep them in the refrigerator. Whenever you feel like eating some, simply take it out and enjoy it with your meals.
I usually make this pickle in a large quantity. It is very tasty, and you can enjoy it whenever you like. I store mine in the refrigerator and aim to use it within three months.
