Hello Foodies
How are you all? I hope you are doing well. Today, I want to share a famous Persian food with you that is loved by many people. This dish is prepared in different countries, and people have their own ways of making it. In Pakistan, people also prepare this dish nowadays, but many people have different ideas about its original recipe. We really enjoy Persian food, and some people also consider this dish similar to Afghan food.
Today, I am going to share the recipe for Chelow Kebab, a delicious kebab dish served with rice. I made these kebabs using both chicken mince and beef mince, and the final result was very tasty.
Ingredients for the Kebab
For this recipe, I used:
1 kg chicken mince
1 kg beef mince
3 large onions
1 teaspoon baking soda
Onion powder
A little butter
Mixed spices
Black pepper
Turmeric powder
Salt
Cumin
Coriander powder
Saffron
Boiling water for the saffron
Desi ghee for greasing the pans
Tomatoes for serving
Preparing the Mince
First, take three large onions and chop them finely. You can also grind them using a meat grinder. After grinding, put the onions in a clean cloth and squeeze out all the extra water.
Do not throw this onion water away because we will need it later while preparing the kebabs.
Now, take the chicken mince and beef mince in a large bowl. Add the prepared onions and mix everything together. After mixing, grind the mixture one more time using a chopper or meat grinder. This helps the ingredients combine well and gives the kebabs a better texture.
Preparing the Saffron and Spices
Take a small bowl and add some saffron. Pour boiling water over it and leave it for a while so that the saffron releases its beautiful colour and aroma.
Now add the baking soda to the mince mixture. Baking soda helps the kebabs hold their shape. Add onion powder, a little butter, mixed spices, black pepper, turmeric powder, salt, cumin and coriander powder.
I used around two teaspoons of mixed spices, but you can adjust the quantity according to your taste.
Finally, add the prepared saffron water and mix all the ingredients thoroughly until everything is well combined.
Shaping the Kebabs
For cooking, I used two frying pans because I wanted to prepare the kebabs quickly.Grease both pans well with desi ghee.
Now take a portion of the mince mixture and shape it into a ball. Place it on a piece of plastic, cover it with the plastic and gently press it with your hands to make a long kebab shape. You can follow the same method for the remaining mixture.
This is a simple way to shape the kebabs at home without any special equipment.
When shaping the kebabs, dip your hands in a little of the onion water that you saved earlier. This will help prevent the mince from sticking to your hands. Then place the mince on a piece of plastic and use your hands to shape it into a long kebab. Once you place the kebab in the greased frying pan, dip your fingers in the onion water again and gently tap the surface of the kebab with your fingers to make it a little thinner and smoother. Repeat the same process for all the kebabs.
Cooking the Kebabs
Place the shaped kebabs carefully into the greased frying pans. Cover the pans with lids and cook the kebabs over high heat for about five minutes. Then turn them over and cook the other side for another five minutes.
The kebabs release their own juices during cooking. Make sure they are cooked thoroughly before serving.Once the kebabs are ready, remove them from the pans. Put the tomatoes into the same pans, sprinkle a little salt over them and cook them for a few minutes until they are nicely softened.
Serving the Chelow Kebab
