Ingredients
1 kg bhindi (okra)
1 kg tomatoes
2 onions
Salt to taste
Cumin
Coriander powder
Other spices of your choice
Oil as needed
Green chillies (optional)
━━━━━━━━━━━━━━━━━━
Step 1: Wash and Cut the Bhindi
First, take 1 kg of fresh bhindi and wash it well. Leave it aside for some time until it dries completely.
It is important to dry the bhindi before cutting it. If you cut it while it is wet, it becomes sticky, and the sticky substance inside can stick to your hands. Once it is dry, cut the bhindi into small pieces.
Step 2: Fry the Bhindi
Heat oil in a pan and fry the bhindi in batches. Fry it well, then take it out and keep it aside.
Frying the bhindi first helps give it a nice taste. Once all the bhindi is fried, you can move to the next step.
Step 3: Prepare the Tomato Paste
Now take 1 kg of tomatoes and blend them into a fine paste.
Pour the tomato paste into a pot and let it cook until all the water dries up. Keep cooking until the paste becomes thick.
When the tomato paste is ready, add the fried bhindi to it and mix gently.
Step 4: Prepare the Onions
Take 2 onions and chop them very finely.
Now use the same oil in which you fried the bhindi. Add the chopped onions and sauté them lightly until they become soft.
Remember, you do not need to make the onions brown. Just cook them a little until they become soft.
Step 5: Add the Spices
Now add salt, cumin, coriander powder, and your other spices to the bhindi and tomato mixture.
Add the lightly cooked onions on top and mix everything well. If you like spicy food, you can also add green chillies at this stage.
Make sure everything is mixed properly so that the bhindi gets the taste of the tomatoes, onions, and spices.
Step 6: Cook on Low Heat
Now cover the pot and let the bhindi cook on low heat for some time.
If you feel that more oil is needed, you can add another 2–3 tablespoons according to your taste. However, you can skip adding extra oil if you prefer, because the bhindi has already been fried and absorbs quite a lot of oil.
As the bhindi cooks with the tomato paste and onions, the oil will gradually start to separate. This is a sign that your Bhindi Masala is almost ready.
