Have a great day dear friends 🤗. I think you are fine. Although yesterday was a holiday, it was very tiring because it was busy. Ash-plantain is a common plant in Sri Lanka. And ash-plantain is a vegetable that is beneficial for many diseases. It is mentioned in Ayurveda as a vegetable that increases body strength. It is said that there are more nutritional components. So today I am going to make a delicious moju made from ash-plantain. And vinegar is used for this. Increase its flavor. If I eat it the way I make it, everyone will try it. So let's find out what ingredients are needed for the preparation process.

Materials Used.

250g Ash Plantain.

1 Teaspoons of crushed chili powder.
1 Teaspoons of curry powder.
Salt powder to taste.
1 Teaspoon of Mustard Powder.
1 Teaspoon of Pepper powder.

100g of small red onion.
4 Green chili pods.
A little chopped garlic.
Some curry leaves.

A pinch of tamarind.
Some water.
2 Teaspoons of Sugar.
Coconut oil for frying.

Method of preparation.

So let's see how to do the setup. First we remove the gray banana peel and wash it with water. Then cut into small pieces as shown in the pictures or as desired.

Then place a pot on the stove and add coconut oil. After the coconut oil is hot, add Ash Plantain pieces and fry until golden.

Let's now add onions and green chillies to the same oil pot and fry it without leaving it for much time.

Let us now prepare a siyabala mixture by adding sugar, siyabala and water and make it into juice.

Next, we take a pot and add about 2 table spoons of oil to it, after it gets hot, add white salt, fry it half way and add curry leaves.

Now add salt, curry powder, chili powder, pepper, mustard powder. Add the tamarind mixer to it and mix well.

Now we add green chillies, gray banana and onion to the thickened mixture and stir well and remove from the heat.

This delicious Ash Plantain Moju is a very suitable dish for the dining table especially on festive occasions. Also suitable for any rice menu. A dish suitable for the Sinhala New Year's table.
