Vegan "curd" pancakes 🥞 (recipe)

We have these special pancakes in Lithuania made of curd so it was really nice to find a vegan alternative to this nostalgic food that I used to have as a child.
Do you make pancakes of curd or is it just Eastern European thing? 😀

If you are not familiar with curd pancakes, I still encourage you to try this recipe as it is not only tasty but also full of protein from tofu. 💪

You will need:

300 g. firm tofu
1 ripe banana
60 g. wheat flour (or other of your choice)
1 tablespoon of sugar
Pinch of salt
Coconut oil for cooking (1-2 teaspoons)

Preparation:

  1. Mash tofu and banana with a fork. Add flour, sugar and a pinch of salt. Mix everything well. The consistency should look familiar to curd.

  2. Preheat the pan with coconut oil. You will need about 1 teaspoon of coconut oil, depending on the size of the pan. If you cook more than one batch of pancakes, add more coconut oil each time.

  3. Take 1 tablespoon of the pancake mixture and form a ball in your hands, then press it in to a flat pancake (but still 1-1,5 cm thick).

  4. Cook both sides of the pancakes for a couple of minutes until golden brown.

Serve with maple or other syrup, icing sugar or fresh berries!
