Roasted sweet potatoes topped with a generous sprinkle of coconut sugar—a simple combination that results in a luxurious dish. The idea for this dish came to me when I was craving something roasted. So I decided to try roasting sweet potatoes; usually, when I enjoy roasted sweet potatoes, I use a special variety called "ubi celembu." But this time, I turned regular sweet potatoes into a delicious treat with melted palm sugar. The generous topping makes this dish look absolutely amazing.




Ingredients

4 sweet potatoes
1 tablespoon palm sugar
1 tablespoon sesame seeds
1 tablespoon peanuts




Instructions


Wash the sweet potatoes thoroughly and scrub them first, since we’ll be baking them with the skin on, then slice them thinly—about half a centimeter thick.

Next, arrange them on a baking sheet and bake in an oven at 180 degrees Celsius using top and bottom heat for about 2 hours. If you want them to cook faster, you can parboil them until half-done first, though the texture will be slightly different.

Once they’re partially baked, sprinkle them with powdered palm sugar, then top with roasted peanuts and sesame seeds, and bake again until fully cooked.

These ready-to-serve roasted sweet potatoes make a perfect healthy family snack to enjoy during the rainy season—best served warm. They’re incredibly tender and cooked evenly, even though they take quite a while to prepare, but I’m very satisfied with the result.

The flavor is savory-sweet with a rich aroma of sesame and palm sugar. The combination of ingredients is just right—I’m sure anyone who tries this will want to make it again because it’s truly delicious, especially for those of you trying to cut back on oily foods; these sweet potatoes will be the perfect solution, in my opinion.
