Vegan dishes are always fun to make into something unique. Like this eggplant, for example, I found this rolled eggplant recipe with a variant of meat filling. But who would have thought for vegans meat could be replaced with anything, right? I have an idea of adding stuffing instead of meat with mashed potatoes which have a creamy texture. I'm sure this will all be delicious, right? Moreover, combining it with potatoes is sure to be a spectacular idea later and will be very delicious.

The mashed potatoes that I use are the flavor enhancer of the eggplant rolls that I want to serve today. Well eggplant is often processed by frying it, because in my opinion that is the best way to serve it. However, what if today I prepared fried eggplant with a different nuance, it would be very surprising.
