Hello, how are you? It has been a while since I cooked and ate chicken afritada, and I guess my parents are craving one too. So usually when we have chicken in stock, I usually cook it adobo, but today, for a change, they asked me to cook afritada instead.

I started cooking late today, so we ate lunch at 2 pm, two hours from our usual lunch time LOL.



Ingredients I Used:

  • 1/2 cup of Cooking Oil
  • 6 Potatoes
  • 1 Carrots
  • 1kg Chicken
  • 1 Red Bell Pepper
  • 4 Garlic Cloves
  • 4 Small Red Onion
  • Ginger
  • 1 tbsp. Butter
  • 2 tbsp. Fish Sauce
  • 400g Spaghetti Sauce
  • Chicken Broth Cube
  • 3 Cups of Hot Water
  • Black Pepper
  • Salt


Let's Cook!

The first thing I do is heat the pan, add half a cup of cooking oil, add the potatoes and carrots, and fry them until crispy. You can skip this part, and I just like the taste of it better when fried first, but highly recommended. Set them aside for later.


In the same pan, I season the oil with a little salt and ground pepper, and then I add the chicken.


Cook it until some part of it is crispy, then add the aromatics like red bell pepper, garlic, red onion, and ginger, and saut茅 them until the aroma comes out.


To make it extra, I add a tablespoon of butter for a buttery taste and smell.


Then I add 2 tablespoons of fish sauce. Let the fish sauce seep into the chicken.


Then I add spaghetti sauce, cream, and cheese. I should add tomato paste, but we ran out of it.


Then I add one chicken broth cube.


Mix everything until well combined, and then add three cups of hot water. Cook it for 15 minutes over medium heat.


After that, I added the potatoes and carrots I fried earlier and then cooked them for about 5 minutes over medium-low heat.


Then I added a dash of ground black pepper for extra spice.


Serve hot and plated.


Perfect to eat when it is still hot.
