Hello friends,

Holiday season is on its way. Do you prepare something for that special occasion? I've been preparing to make some holiday cookies. My holiday cookie cutters and another tools arrived yesterday so I'm ready to go! I am so excited, especially because I'll decorate the cookies with royal icing so they'd be beautiful. I cant wait! I'm planning to make some batches of cookies and I'll wrap them nicely and share it with people around me.

To keep myself sane while waiting for my baking tools to arrive, I chose to keep myself busy in the kitchen. It sounds exaggerating, doesn't it? :-D That's me when I'm talking about baking and cooking, I'm over the top. Sorry...

Before sharing with you my future holiday cookies, today I wanted to share the recipe of this peanut butter brownies. If you like peanut butter, you might love this brownie. My partner said it tasted like Snickers. I actually dont know how does Snickers taste because I tried once a long time ago and I dont like to eat that kind of snack. One thing for sure, they both taste good :-)

Peanut Butter Stuffed Brownies with Chocolate Chips

Original recipe from Sally's Baking Addiction

Ingredients

  • 115 salted butter
  • 228 gr semi-sweet chocolate, I used the mix of 54.5% and 70% cacao
  • 150 gr granulated sugar
  • 50 gr brown sugar, I used the dark one
  • 3 large eggs
  • 80 gr all purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1/4 tsp salt
  • chocolate chips to sprinkle on top

For Peanut Butter Filling

  • 185 gr peanut butter
  • 120 gr powdered sugar
  • 2 tsp vanilla extract
  • 2 tbsp milk

Directions

  • In a clean and heatproof bowl, place butter and chocolate, melt them in bain-marie and stir occasionally. Once melted, leave it to cool for about 10 minutes.
  • For Peanut Butter Filling: While waiting for the mixture to cool, prepare one bowl and add into the bowl all ingredients. Using electric mixer, mix them until well combined. The texture will be crumbly. Set aside.
  • Preheat oven to 180°C, line a square or rectangle pan with a parchment paper, leave an overhang all sides, set aside. I used 8x8 inch square pan while the recipe calls for 9x9 inch pan. It only affects the thickness. Mine turned out quite thick.
  • Whisk granulated sugar and dark brown sugar to the cooled mixture, add in eggs, one at a time followed by vanilla extract. Add in all purpose flour, cacao powder and salt, mix well. Pour half of the batter into the pan, spread the peanut butter filling and pour the other half of brownies batter. Sprinkle with chocolate chips.
  • Bake for about 35 minutes. Check your brownies by inserting a toothpick. If it comes out clean, it's ready. Leave the brownies to cool completely before cutting it.

The brownies turned out fudgy which is a good thing because I prefer it that way. I also love the PB color in the middle, it looks nice. If you love peanut butter and chocolate, this brownie is worth a try ;-)
