Hello, lovely people of Hive, how are you doing? Today I want to share with you a side dish I made recently at home—one that’s not only quite simple to prepare but also a great way to add a little variety to the sides we serve with our meals. It’s roasted vegetables with thyme and oregano. In this case, I used potatoes and baby squash, and I loved the result—they go really well together.

This is a side dish that lets us swap out our everyday rice for a healthier option, and best of all, it tastes amazing, is easy to prepare—since it basically cooks on its own—and, of course, is very nutritious. By keeping the skins on the vegetables, we also add a little fiber, so as you can see, there’s nothing to waste in this dish. Without further ado, let’s get to the ingredients and the step-by-step instructions.

Ingredientes/Ingredients

Ingrediente / IngredientCantidad / Amount
Papas medianas / Medium Potatoes3 unidad / 3 units
Calabazas baby / Baby pumpkin1 unidad / 1 unit
Aceite de Oliva / Olive Oil2 cucharadas / 2 tbsp
Paprika ahumada / Smoked paprika1 de cucharadita / 1 tsp
Tomillo / Thyme1 cucharadita / 1 tsp
Orégano / Oregano1 cucharada / 1 tbsp
Sal y pimienta / Salt and pepperAl gusto / To taste

Procedimiento/Procedure

To prepare our Roasted Vegetables with Thyme and Oregano, we start by washing the vegetables very thoroughly, since we’ll be keeping the skin on both. Next, we cut them into sticks. Keep in mind that the squash cooks faster than the potatoes, so the potato sticks should be cut thicker than the squash sticks to ensure they stay firm.

Once we've cut them, we season the vegetables by adding olive oil, paprika, thyme, oregano, salt, and pepper. We mix everything together thoroughly so that the vegetable sticks are well coated with the seasonings.

At this point, we're ready to put them in the oven. We spread them out on a baking sheet—to which we've added olive oil—and arrange them so they aren't stacked on top of each other, ensuring they all turn a nice golden brown.

Bake at 200° for about 20 minutes, removing them from the oven halfway through to drizzle a little more olive oil over them, then return them to the oven until they're tender and golden brown. And that's it—now you have a delicious and healthy side dish to go with your meals.

As you can see, it's a pretty simple dish to make, and it turns out absolutely delicious—not to mention that it looks really tempting, and the combination of flavors is out of this world—so please, you have to try making it at home.
