Who doesn't love Nutella? Well, I used to love it but I dont buy and eat Nutella anymore for some reasons. Well I still eat it if someone serves me Nutella but at home, we dont have it anymore. It began with my mother-in-law who started banning Nutella at her house. My partner said that once, when he still lived with his mother, he bought Nutella and when she found out, she threw it in a trash bin. Besides palm oil, there's some substances that she thought it's not healthy for our body. Since then, Nutella is banned in our family.
We found the replacement for Nutella. It's Nocciolata. The taste's as good as Nutella, it's organic, gluten free, palm oil free and we love it. We basically dont eat this kind of thing so much but when we crave for some, we go for Nocciolata.
For today's baking, I made "Nutella" Brownies which the recipe comes from, as usual, Sally's Baking Addiction's blog. The recipe calls for Nutella, since it's banned in my family, I used Nocciolata instead. I bought two jars of Nocciolata for a while and I thought it's time to make something with it. I doubled the recipe and did some modifications. So, here is my version.
"Nutella" Brownies with Chocolate Chips Topping
Ingredients
- 144 gr unsalted butter at room temperature
- 200 gr light brown sugar
- 4 large eggs
- 3 tsp vanilla extract
- 500 gr chocolate hazelnut spread, I used Nocciolata instead of Nutella
- 1 tsp salt
- 188 gr all purpose flour
- chocolate chips as needed (for topping)
- pink Himalayan salt for sprinkle
Directions
- Preheat oven to 180°C, line a 9 x 13 inch pan with a parchment paper, leave an overhang all sides, set aside.
- In a bowl of a stand mixer, beat the butter until creamy for about 2-3 minutes on high speed.
- Add in the brown sugar, beat until creamy and fluffy. Scrape down the bowl.
- With the mixer running on low, add in the eggs, one at a time. Then add in the vanilla extract. Scrape down the bowl.
- Add the "nutella" into the mixture until well combined.
- Add in all purpose flour and salt, beat on high speed for no longer than 30 second. Dont overmix the batter.
- Pour the batter into the baking pan, top with chocolate chip and sprinkle some pink Himalayan salt. Bake for about 30 minutes.
- Leave it to cool completely before cutting.
I've just had a bite and it's good and tasted like "Nutella". Will pack some of these goodness to work, Ill be having some yummy snack :-) I also made a big batch of this brownies so my partner can bring some tomorrow and share it with his friends. The last time I met his "school" friend (he's currently studying After Effects for cinema) he said he's very happy that my partner always brings them some food that I make at home. They are happy to be fed with some good homemade food :-D I'm happy too because the sooner my goodies gone, the sooner I can bake again, hehe.. Win win solution.
