Its been a while since I ate plantain and beans porridge. So, today, I remembered it and have decided to prepare it.
Now, let me figure out all the ingredients I used and how I prepared all of them to suite my taste. Lets go....
## The ingredients
- Beans (3 cups)
- Plantain (6 unripe fingers)
- red oil (fresh palm oil)
- pepper (dried)
- onions(3 small bulbs)
- salt (to taste)
- water ( as desired)

Lets move over to the cooking proper.
At the genesis, I washed the unpeeled plantain and then peeled off the skin of the unripe plantain.
After rewashing off any trace of sand after peeling, I then cut it into smaller pieces as desired.

Then, I placed a pot on fire and added 4 cups of water to it.
I allowed the water to heat up before adding the already sliced plantain (don't allow the water to boil before adding the plantain. Instead, once it is lukewarm, add it. it will help the plantain to soften easily)
I covered the pot and allowed it to boil for about 15-20 minutes. Thereafter, I checked on it and found out that it have soften to my liking.
But while waiting for the plantain to soft for 15-20 minutes, I arranged other ingredients. I sliced and pound onions.
At the expiration of the long awaiting minutes, seeing that the plantain is now as soft as I desire, I added my already cooked beans. I cooked it few days ago and preserved it with freezer.

Immediately, I added all the other ingredients: pepper, onions, red oil and salt.

I stirred and allowed to simmer for a minute. Then, I brought it down and our food is ready!!!
You can eat it when it is hot, warm or cold. As for me, I like eating beans and plantain when it is hot. So I enjoyed my food while it is hot.
