Are you wondering for breakfast this morning? I would like to share a dish traditionally made by Filipinos.

Cooking Filipino Chicken Arroz Caldo

A Traditional Filipino food best consumed by everyone during cold season.The good news is everyone can make it easily as long as the ingredients are available. It’s quite simple to make it and I will share how this dish was done.

At first we will be needing two types of rice: long grain white rice and glutinous rice (malagkit).

Fresh cut chicken is what I am be using. All we have to do is sauté it with garlic, onion, and ginger until the skin and outer part is light brown. Aside from it we will be adding another flavor with the use of rotisserie chicken. It will make the dish very flavorful.

The aromatic that mainly contributes with it are garlic, onion, and ginger. This will greatly help when it comes to its fragrant. As for the topping, make a batch of toasted garlic and top it to your dish along with chopped scallions and boiled egg. Other people enjoy it with crispy pork as another flavor added (optional). Lastly you may also enjoy adding chili sauce for extra flavor.
Preparation time for this dish will only take up to 10mins while cooking time is approximately 1hour that will make you enjoy and 3 other more.

Ingredients:
• 1 lb. chicken, cut into serving pieces
• ½ cup glutinous rice
• ½ cup Long Grain rice
• 1 large onion, chopped
• 3 cloves garlic, crushed
• 3 tablespoons cooking oil
• 6 to 8 cups chicken broth
• 3 tablespoons cooking oil
• Fish sauce (patis) and ground black pepper to taste
• 4 thumbs ginger
Toppings
• ¼ cup chopped scallions
• 6 cloves garlic, crushed and toasted
• 2 boiled eggs, sliced into half lengthwise
• Crispy pork (optional)
• Chili Sauce (optional)
Instructions

  1. Heat oil in a cooking pot.
  2. Sauté garlic, onion, and ginger.
  3. When the onion starts to turn soft and translucent, put the chicken into the pot. Wait it cooks until it turns light brown.
  4. Add glutinous and long grain white rice. Sauté for 1 minute.
  5. Pour 6 cups of chicken broth. Let it boil then cover the pot. Continue to cook in medium heat for 35 to 40 minutes. To prevent the rice from sticking on the pot make sure to stir the mixture every few minutes. Add more broth if necessary.
  6. Add fish sauce, and ground black pepper. Stir. Continue to cook until it reaches your desired consistency.
  7. Transfer to a serving bowl. Top with egg, scallions, garlic, and crispy pork (optional).
  8. Pour with chili sauce depending on your cravings (optional).
  9. Serve hot. Share and enjoy!
