Since I worked at the hotel as an apprentice I have always struggled to find a good Caesar salad. Let's be honest it's all about a wicked dressing.
This recipe really gets the taste buds cranking!

For this recipe they key ingredient is anchovies. You can find them as little fillets in oil at any supermarket.
I place the anchovies in a container and add my eggs, garlic paste, mustard and vinegar.
With a hand blitzer bind all this together to form a nice solid mix.
Using a squeezy bottle fill it with veg oil. Don't use EV oil it will give it a very bitter flavour.
Slowly while you are blitzing add the oil until it because a nice think sauce.
Now add the Worcestershire sauce and the lemon juice. Add a small pinch of salt as the anchovies are already quite salty.
To make your Caesar salad in a bowl put some roughly chopped cos, crispy bacon and shaved Parmesan. Add the dressing (generously) and mix together with your hands. I like to crisp a small piece of garlic toast for the top.
Ingredients:
5 whole eggs
100gm anchovies with the oil
1 tablespoon Worcestershire sauce
1 lemon juiced
1 tablespoon garlic paste or 2 cloves
1 teaspoon mustard
A dash of vinegar
400 ml of veg oil
Salt to taste
