Lately I've been learning a lot about the glycemic index, as a diabetic, I'm still learning to make myself healthier. I know a lot of things, including foods I can eat without having to worry about raising my blood sugar. I'm trying to find out the ingredients of a food, the main thing is raw materials. Like rice, sweet potatoes, yams, cassava, potatoes, oats and others, I got a lot of facts, including the glycemic index.
Of all the ingredients I mentioned above, I got the fact that sweet potatoes are a very good type of food for diabetics. Sweet potatoes are a type of food that is high in fiber which is good for diabetes, this can help reduce blood sugar resistance to insulin. Sweet potatoes also have more natural sugars than potatoes, but have fewer calories, which is why sweet potatoes are better consumed by diabetics than potatoes.
Not only for diabetics, sweet potatoes are also very good for those who want to prevent this degenerative disease, apart from being a natural sugar which is low in calories and high in fiber, there are many kinds of benefits of sweet potatoes, namely as a source of anti-oxidants, high in vitamin C and potassium, for it is good for the heart and other organs of the body.
I became more interested in and I consumed them as the main food ingredient to fulfill my daily carbohydrates because sweet potatoes are very easy to find in various markets; traditional market or supermarket, the price is cheaper than rice or wheat and also the continuation of this food will be maintained, because many agricultures still make sweet potato the main commodity.
Sweet potatoes are also very easy to process into food, their sweet taste can be used as a dessert or main menu, for example today I made sweet potatoes as the main meal for lunch. I want to combine the sweet potato with the chickpeas that I bought from the supermarket last week. Seeing the many posts in the plant power community that use chickpeas as the main ingredients. I get chickpeas at a fairly cheap price and quality.
I soaked the chickpeas overnight, before going to bed I took 1 liter of water with a handful of chickpeas. Then in the morning I noticed that it had expanded a little but it was still firm when squeezed. Immediately I boiled it for 30 minutes and peeled off the epidermis. I store it in the refrigerator with a container filled with leftover boiled water.
Sweet Potatoes with Spicy Chickpeas
I made a meal that I got from some leftover food stocks, you can use whatever ingredients you like, it doesn't have to be according to my recipe, just as much as you can and be happy. Don't forget to use quality ingredients, Hivers!
Ingredients;
- 2 pcs sweet potato (300 gr)
- 100 gr chickpeas (which are soft after soaking overnight and boiling)
- 20-40 ml of chili sauce
- 50 gr cashew nuts (already chopped)
- 20 ml hummus
- 20 ml of canola oil
- Oregano and salt
- Sesame and chia seeds
How to make Sweet Potatoes with Spicy Chickpeas;
- Wash the sweet potatoes thoroughly under running water, make sure there is no residual soil or dirt. After that, wipe it dry.
- Preheat the oven to 250 degrees Celsius. Cut the sweet potato in half, brush with oil and salt. After that, bake for 30 minutes or the sweet potatoes will be perfectly cooked.
- Remove the sweet potato from the oven, then take the middle part of the sweet potato to make a little hole.
- Mix the chickpeas with a little bit of the remaining sweet potatoes and also the chili sauce, add it.
- Pour the chili sauce again, adjust to taste. Sprinkle on the oregano and cashews. Bake again in the oven for 10 minutes.
- Pour the hummus on a plate, then place the sweet potatoes on top, pour some hummus on top of the sweet potatoes. Sprinkle a little sesame and chia seed on the dish
- Sweet Potatoes with Spicy Chickpeas are ready to be served.
This is the first time I've tried food like this, a little collaboration with various existing recipes. I feel an extraordinary sensation with this food, sweet, savory, spicy into one, I think this really suits my taste. I hope this recipe helps!
