Today I will be presenting my new way of making summer salad.
I used to cook my chickpeas at home instead of buying a ready-made pack.
It is easy, fresh, and cheap to do it at home.
Wash and soak chickpeas overnight.
The next day, cook them with or without salt, using the appropriate amount. I use a pressure cooker, you can or use a normal saucepan.
Once they were cooked, I put them, separating the aquafaba and chickpeas, in the jars and saved them in the refrigerator.It's handy.
Ingredients:
1 cup quinoa
1 sweet potato
1red paprika
1 cucumber
2 celery sticks
1 lime
1 onion
200 grams of asparagus shoots
1 carrot
1 tomato
1 apple
7-8 Brussels sprouts
1 cup cooked chickpeas
1/2 lime juice
1 tbsp oil
1/4 tsp garam masala
For dressing:
2-3 tbsp tahini sauce
1/2 tsp salt
1/2 tsp pepper
1/2 lime juice
1 cup aquafaba or any vegetable stock
Mix all dressing ingredients, add water, and mix all things thoroughly. And keep it aside.
Cook quinoa using the aquafaba on medium heat.
Slice the carrot and sweet potato and steam them for 2-3 minutes.
Steam Brussels sprouts and asparagus shoots. Slice cucumber, tomato, paprika, apple, celery, onion.
In a hot pan, put any cooking oil.
Add sliced onion.
After the onion becomes translucent, add Brussels sprouts and chickpeas. Stir well.
Add 1/4 tsp garam masala and mix it well. Remove from the heat after 3 minutes.
Now all things are ready to be put together or mix.
Set them according to your choice.
Drizzle the dressing while serving. and enjoy it.
