Vegetables With Soba Noodles

Hello, chefs! 😋

This dish can be prepared in all seasons and for all meals and can be eaten in the morning, afternoon or evening, as you like.

The name suggests that it is a vegetable dish, so you can combine different types of vegetables, usually what you have at home, or fresh seasonal vegetables. I used some fresh vegetables and some from the fridge.

What do you need for 4 people?

  • 300 grams of Soba noodles (Soba is a Japanese noodle made from a mixture of wheat and buckwheat flour, it has a slightly strong taste of buckwheat);

Various vegetables, if you go in order:

  • 1 medium tomato
  • 1 red pepper (can be hot if you like hot)
  • 2 stalks of celeriac
  • 1 carrot
  • 1 medium onion
  • 1 or 2 spring onions
  • 1 medium Pak Choi (also called Beijing cabbage here)
  • 1 courgette (zucchini)
  • various spices, I used soy sauce, turmeric, curry, oregano, thyme, salt, and pepper.
  • and olive oil for roasting (some people say it's not suitable, but don't worry, you can use it for roasting, it will make everything more delicious).

Let's get to work. The preparation takes the longest, or rather, all the vegetables need to be cleaned and cut into smaller pieces. And it takes some time. The picture below is a short animation to speed it all up. :)

Finally, we've chopped and prepared all the vegetables for roasting!

Put a pan on the stove, pour in the olive oil, and heat well. (If I had a wok it would be even better, but it's hard to get a good one for induction...).

Add the onions. Add the spices (turmeric, curry, thyme, oregano). Add the carrot and peppers, celery, tomatoes, and zucchini. Keep stirring. Add the Pak Choi, stir again, reduce the heat and cover the pan to let the vegetables steam for a few minutes.

Once the vegetables are cooked over low heat, prepare the SOBA noodles. Pour a liter of water into a large pot and bring to a boil.

Add the noodles and when they are soft, turn off the heat after three minutes and rinse them with cold water. This is a must! If you don't do this, they will stick!
Drain well and add them to the vegetables.

Mix the vegetables well with the noodles and add the chopped spring onions.
