Spaghetti With Tomato Paste

Hello foodies! 😋

One quick recipe, I’ll say almost fast-food.
We still love tomatoes, but the season is over and we use some tomato paste either homemade or purchased. Otherwise, I have something homemade that we cooked about a month ago, but we will use it in the winter when we celebrate the home garden and wait for spring :)

For this simple dish we need (for 4 people):

  • pasta 400-500 gr
  • Parmesan cheese 100 gr
  • a medium onion or a couple of smaller ones
  • a bunch of parsley
  • tomato paste
  • mustard paste
  • olive oil, salt, pepper

Start with the onion, first cut it into small pieces and start frying in two tablespoons of olive oil.

Continue with the parsley. Cut a bunch of parsley into small pieces and add it to the pot. When it's estimated to be fried, reduce the temperature to a minimum.

In the next step, squeeze up to about 2 to 3 tablespoons of tomato paste and 1 tablespoon of mustard paste out of the tube.

Mix with 2 decilitres of water and salt and pepper and mix well.

Pour into a saucepan and bring to a boil.

While the sauce is slowly boiling, prepare the pasta. I break them in half, they cook faster. True pasta lovers would probably have their hair raised in horror. 😎

Pour a liter and a half of water (3 times the amount of pasta) into the pot, salt the water well, and add the pasta when the water boils.

When everything is cooking, grate some 50 grams of parmesan.

Thicken the sauce with grated Parmesan cheese.

The pasta is cooked. I cook them for about 10 minutes, some cook less (al dente) and some more, depending on what suits you.

Now I could pour the sauce into a pot of pasta, but at home, we add the sauce to a plate for everyone. Add parmesan cheese. You can also offer some hot chili sauce to anyone.

The advantage of this dish is also that we can improvise, in fact, in addition to pasta, we can prepare any sauce that comes to mind.
