Hi bloggers and food lovers! Today I’m making some fluffy, jiggly pancakes, they have a soft texture and a sweet taste, and they’re easy to make. You can top them with whatever you like. This time, I’m making fluffy pancakes topped with ice cream. Okay, let’s get started!
Ingredients:
2 eggs
3 tbsp granulated sugar
1 tsp vanilla extract
1/2 tsp cream of tartar
3 tbsp all-purpose flour
1 tbsp cornstarch
1/2 tsp baking powder
7 tbsp milk
vanilla ice cream for topping
Instructions:
Crack 2 eggs and separate the whites from the yolks
Add the vanilla extract and milk
Whisk the egg yolks until pale
Add the all-purpose flour, cornstarch, and baking powder to the egg yolks
Stir until well combined and a batter forms
Set aside
Take a bowl containing the egg whites, then add cream of tartar and 1 tbsp sugar
Beat the egg whites with mixer on high speed
While beating, gradually add the sugar until the egg whites form soft peaks
Gently fold a small amount of the egg whites into the yolk batter
Fold the batter until well combined
Add the egg white and yolk mixture to the remaining egg whites
Gently fold the mixture again
Once thoroughly combined, transfer the pancake batter to a piping bag
Heat a pan and lightly grease it with oil
Pipe the pancake batter onto the pan and add a little water around the edges of the pancake
Cook the pancake over the lowest heat setting
Continue until all the batter is used up
Once all the batter is used up, top the fluffy pancakes with vanilla ice cream and sprinkle matcha powder on top
The fluffy pancakes are ready to eat
