Hi dear bloggers and food lovers, do you guys like chocolate cake? I think most people love chocolate cake, but what if this chocolate cake were a little more “healthy”? I found this eggplant chocolate cake recipe on Elaine Hanafi’s YouTube channel, it never occurred to me before that eggplant could be used as an ingredient in baking. The texture isn’t soft it’s more like a brownie and denser but this is perfect for adults who are cutting back on gluten and sugar. It doesn't require many ingredients, and it takes less than an hour to make. Okay, let’s get right to it.

Ingredients:

  • 1 eggplant
  • 2 tbsp cocoa powder
  • 2 tbsp oats
  • 2 tbsp sugar
  • 1 egg
  • 2 egg whites
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 packet vanilla powder
  • dark chocolate chunks

Instructions:

  • Blend the oats until smooth to make oat flour

  • Set aside

  • Peel the eggplant and grate it

  • After grating, squeeze out the excess liquid from the eggplant and discard it

  • Place the grated eggplant in a bowl

  • Add the oat flour

  • Add the cocoa powder

  • Add the baking powder and baking soda

  • Crack 1 egg and add it to the bowl then add 2 egg whites, sugar, and vanilla powder

  • Whisk until all ingredients are well combined

  • Pour the batter into a baking pan lined with parchment paper

  • Add chocolate chunks to the batter

  • Place the pan in the oven

  • Bake the batter for 20 minutes at 200°C

  • Let the chocolate cake cool

  • The chocolate cake is ready to eat
